Italian Chicken Skillet
Tip I learned from a chef: Cook your pasta in salted boiling water for 3/4 of the recommended cooking time. Drain, then add to your sauce to finish cooking. It will soak up the flavor without soaking up all the sauce.

Waikiki Meatballs
I didn't think the vinegar was too much at all, as I've read in other reviews. I used rice vinegar and a few shakes of red wine vinegar and it worked beautifully. I'm gluten intolerant, so a piece of tapioca bread ground up finely in the mini chopper easily replaced the saltines. Big chunks of sweet onion were a nice addition to the sauce, and the possibilities are endless as to what could be added (bamboo shoots, carrots, celery, etc.). Great recipe – thanks for sharing!

Onion Rice
I halved the recipe and ate every bite for lunch! The red onion is a key ingredient that I wouldn't substitute. I added chopped fresh garlic (yum) for the cholesterol lowering benefits. I only had Minute Rice on hand, so it took just 5 minutes to steam after browning. I cook all the time, and I've found that often it's the simple and delicious recipes like this that end up with a permanent place in my recipe file. I can't wait to try it with steamed or roasted asparagus!
