Better (and healthier!) than the kind I buy at Whole Foods. I omitted the pepper and it was great! I also ground it up first in my magic bullet to bring out the flavors.

Chex® Muddy Buddies®

I used Cascadian Farms Chex-like cereal. It only measured about 6.5 cups however, so I only did 2/3 of the other ingredients. I also substituted Sunbutter (sunflower butter) for the PB because my little girl has a peanut allergy. I also melted everything on the stovetop instead of in the microwave because I don't use a microwave. This recipe turned out fabulous! Everyone loved it!

Ono Butter Mochi

This recipe was super easy! I made it for an Asian food day. The mochiko was kind of hard to find but I called around to a few oriental grocery stores and had no problem finding it that way. I don't have anything to compare this to because I had never even heard of it before yesterday, so I don't know if it is better than other Mochi recipes. I followed the recipe but added about 1/2 C. more coconut because I usually love coconut. Overall I thought it was good but a little too sweet. If I made it again I would probably reduce the amount of sugar to maybe 2 C. and use unsweetened coconut. I would also use Rapadura sugar rather than white sugar just because it is more flavorful and less unhealthy. But even with the sweetness, I still thought it was yummy. And no one else who ate it seemed to have a problem with the sugar, so maybe it was just me.

No Bake Cookies III

I made these using Sunbutter from Whole Foods instead of PB because of a peanut allergy in my family. I also used Rapadura Whole Sugar instead of white sugar and used a little less sugar than it called for and threw in a little Stevia to make up the difference. And the final thing I did different was to used rolled oats instead of the quick cooking kind. The recipe turned out great and the cookies only lasted about a day!

Refried Beans Without the Refry

This recipe was great and so easy. The hardest part was draining the liquid from the cooked beans, but my husband helped. I used my magic bullet to blend the onion into a puree and mixed it into the beans after cooking. The beans would have been a good soup if they would have been done around dinner time. But I just mashed them all. Had so much that I made a yummy 7 layer dip with some of the beans. I will absolutely make this recipe again.

Boudreaux's Zydeco Stomp Gumbo

This is the best-and only-gumbo I have ever had. The roux was much easier to make than I thought it would be. I used King Arthur White Whole Wheat flour instead of all purpose flour and it worked just fine. Omitted the shrimp since I'm pregnant. Used 3/4 lb. ground breakfast sausage instead of links although my husband thought links would have been better. He also would have liked it with the shrimp. Couldn't find a red pepper so used jal. pepper instead. Also added about 2 T. green bell pepper chopped. Turned out great and served over rice. My 4 yo even loved it. I also used full amt. of broth and it was soupy, maybe too soupy for some.
