Ann's Shrimp Etouffee

This turned out great. I used tomato sauce in lieu of tomatoes from others suggestions and also used chicken broth in lieu of water. I used cajun seasoning also but a little too much of it. It turned out really spicy. So watch out how much seasoning you use! Perhaps next time I'll try the recipe as is and see if it is better. I hate rating recipes that i've altered!

Irish Chicken and Dumplings

This recipe is wonderful. It takes quite a bit of time to prepare though, and I didn't have a lot of room for the dumplings in my pot. But tastes fabulous either way.

Chicken Spectacular

my husband really liked this recipe. I unfortunately didn't like it as much. It had too many onions that weren't cooked through for my taste. The water chestnuts also made it seem as though there were tons of onions. Next time I will grill the onions before baking and omit the water chestnuts.

Barlow's Blackened Catfish

This was pretty good. It didn't take long to prepare and came out really juicy. It was extremely spicy though, so next time I am going to use less cayenne pepper. My husband is from Louisiana and he loved it.

Sarge's EZ Pulled Pork BBQ

This recipe was really good. The pork came out wonderfully juicy and delicious by itself. I added some bbq sauce from another recipe for beef brisket onto the pork and baked it a few minutes. It was sooooo good.

The mixture turned out really good. These would have been really good if they were fried and not baked though. They were good, but not excellent. The dough seemed to overpower the taste of the sauce for me. Everybody else loved them though!

Chile 'n' Cheese Spirals

I made these for a party and everybody loved them. I didn't care for them as much due to the crunchiness of the peppers. I'm not a huge bell pepper fan. Perhaps next time I'll try sauteing them first. A big hit with everyone else though.

Chicken Enchiladas II

I'm generally not an enchilada person but decided to try these. They were the best I've ever had! I recommend to everyone to try these. I took some of the others suggestions and used cream of chicken soup and added some cumin, chile powder and pepper. This recipe is a keeper.

Cucumber Sandwich

I love cucumbers so this was a good recipe to try. I took some suggestions and used Pita bread but it also kept falling apart. The best way to keep it all together was to use tortilla wraps.

Easy Eggplant Pita

This recipe is easy and great if you like eggplant. My boyfriend loved it! I don't like eggplant that much and I thought it was ok. Great recipe for vegetarians. Next time I might add some meat to it so it will be more filling.

This is a great and easy recipe. I just used regular old bagged potatoes. So I'm sure it's even better with the potatoes called for in the recipe. Was very good!

This is a great recipe and I will use it again. It was a little spicy so next time I might not add so many peppers. I used everybody's suggestions and added half as much brown sugar so it wasn't sweet at all. Very good.

Seven Layer Dip I

This recipe is very similar to others but was really good. Everybody loved it! I axed the ground beef because I didn't have time to cook it and added 1/4 cup of mayonaise to a mixture of sourcream and taco seasoning. The taco seasoning was HOT flavored and so it was really spicy. I recommend using a medium flavored seasoning.
