Barlow's Blackened Catfish

Really like this recipe, have made it many times and it is really easy. I used less of the italian dressing, just enough to coat the fish while it's baking.

Marshmallow Popcorn Balls

Fun Recipe! I changed it a bit because of the ingredients I had. I used chocolate cheerios, semi-sweet mini chocolate chips, and made half the marshmallow mixture. I poured the mixture (which I made in the microwave by the way) over the cheerios, mixed it up, greased my hands and rolled the balls. Then I rolled the balls in the chocolate chips. These were so good.

French Onion Dip From Scratch

Really good dip. I used half the mayo and subbed in half a cup of reduced fat cream cheese. So good. I topped it with chopped green onions and chives. I brought it to a midwestern potluck and everyone loved it!

Crustless Spinach Quiche

I made a diet friendly version of this that turned out great. I used egg beaters, and reduced fat cheese (try some of the pre-shredded kraft or sargento ones from the grocery store). I used sharp cheddar and reduced fat feta. I used spinach and asparagus instead of the onions, I bet you could also reduce the spinach in water if you wanted instead of the oil to reduce fat content further. I poured it into pam-sprayed muffin tins. Excellent!

Really moist and good. I made this recipe but for six servings and filled out 12 mini muffin tins. I used a cream cheese frosting recipe from this website and it was great!
