Blueberry Loaf

So I made this as is and it turned out great. I did double my batch so it would fit my loaf pan and it worked perfectly. I also dusted my blueberries with flour so they wouldn't sink. Worked like a charm. Next time I may omit a little sugar, like 1/4 cup or even try honey. Overall a very good loaf and a keeper. Even my husband who doesn't care for blueberry loaf/muffins loved it.

Soft Caramel Corn

I've made this a few times now and it's so yummy! The only thing I add is a good tablespoon or two of vanilla(depends on how much I have on hand). The vanilla really rounds it out! This is so worth the effort and a bonus..NO baking!!

These are so good and so easy to modify if need be. I am on a nut and dairy free diet. I decided to try hemp milk as a substitute for the milk and it was DELICIOUS!! I was a little leary, but it turned out so well. Moist, tender and just plain GOOD!

Banana Muffins II

I have made these many, many times and it is now my family's favorite over banana bread. The last time I made them I had three little bags of chocolate chips that needed using up and a small bit of peanut butter chips, these all went into the batter! YUM, my kid's were loving these! I think this recipe has replaced my standard banana bread recipe! I also add a tsp of vanilla, but it's decent without.

Citrus Shortbread Cookies

I am getting ready to make these for a second time. I just love these. Tender, soft and yummy. I did add a little more orange zest then called for, I think. I just zested a whole orange. I am getting ready to make these with blueberry and lemon. I think that will be tasty!!

Best Brownies

These were absolutely yummy!! First, I over mixed the batter so it was a bit cakey, but they were still yummy. Two things I did that made a huge difference after they were baked and cooled. After I frosted it, I stuck it in the freezer to harden the frosting and that did the trick to making it thick and hard. Then after the brownies were completely cooled, I refrigerated them, this gave them that fudgey like look and just made them over the top. Give these a try, just DON'T over mix them!! Also...for the frosting I followed some of the tips. I only used half the amount of powdered sugar it called for. This made a TASTY frosting! ADDED 9/8/2011: I always double my recipe, this time I did half whole wheat flour and half AP flour....yummy results and a little better for you. A bonus...my picky husband and kid's didn't even notice!

Monster Cookies II

HOLY HUGENESS! Talk about a giant batch of cookies, but I tell you what, they are worth making at least once! Don't let the amount of eggs, peanut butter or oatmeal scare you! I used a jar of crunchy PB, I bought it by mistake and I am the only one who likes it. I love the extra crunch it gives. I also ended up using a combination of regular m&m's and peanut butter m&m's. My kid's are loving the combo. This is surely a make again! However I am going to try and half it!

Fiesta Chicken and Rice Bake

I followed other reviewers tips and doubled the "sauce" items. I also used some leftover pre-cooked spanish rice. Super tasty and extra flavor! I also used chicken tenders and diced them, making this more of a casserole. Family is going to love this!

Linguine with Chicken and Sauteed Vegetables

LOVE THIS!! I have made this many times, always follow the garlic recipe to a tee...even decreasing a bit if you have little eaters. I over did the garlic once and my kid's requested it to be "normal". I love that this recipe can be used with a variety of veggies. I like to throw in some peas and even some bean sprouts. YOU have to try this, it is a keeper!

Pretzel Dessert

I loved this reciped when I was a kid. It is my favorite and this is about perfect! Do make sure you cover every inch of your pretzel crust so it won't get soggy. Also, when I did my strawberry topping I tossed the strawberries with the jello and got out my immersion blender, and chunked up the strawberries a bit. I knew my kid's would not like the huge pieces of strawberries, they devoured it this way! It seemed to take a bit longer to set up, but it was still delish!

Brownie Chocolate Chip Cheesecake

ABSOLUTELY PERFECT!!! I made this as a request for my 10 year olds birthday. The only change I made was I topped it with homemade whipped cream. It was delish and my 10 year old requested this for next year!

Broccoli Chicken Divan

Delish! Even my 8 year old who is not a "tree" fan loved this dish! They all decided it was a make again for sure! This is going into the new menu rotation! I did add a bit more chicken, about 1/2 pound and also used adobo seasoning, salt and pepper to season my chicken. I also doubled the sauce, using one can cream of broc and one can of cream of chicken. I also used added a bit of sour cream and my cheese was velveeta(I don't know why I bought it and I am trying to use it up, we don't really eat it and it will go to waste). It was delish!!

Thai-Style Peanut Sauce with Honey

Super delish!! It would have been great written as is, but I had to make a few changes based on what I had on hand. I took another reviewers suggestion and used half the amount of vinegar and used water for the other half. I also did not have fresh ginger so I used ground and just guestimated. I also doubled for stir fry. My kids love it!! They wanted it as a snack with veggies and apples...go figure!

Lentils and Rice with Fried Onions (Mujadarrah)

I would give this a 5 star had the recipe been how I prepared it(which was with the help of many of the other reviews). I agree with many of the other reviewers...as written this would be super bland. I did use the cumin, salt and pepper(just a little) and I did not have the chicken boulion so I used chicken flavored adobo seasoning(about a tablespoon I guess)...it seemed to work well and give it a nice flavor. I am sure when I make it again(and I will) it will be a different flavor with the boulion. I am also going to try the garam masala next time as well..just need to get the spices to make my own. I do recommend this recipe, just read through some of the reviews and get some of your own ideas to up the flavor spectrum a bit.
