Eggplant Parmesan II

My first attempt cooking eggplant. I was amazed at how great it tasted. I will never fry eggplant after trying this recipe. My family loved it. it was alot more work then I had anticipated but well worth the effort. Will make this again soon.

Hamburger Cookies

My co-worker made these. So simple and cute, however she used brownie rather than mint cookie. It was fantastic. the brownie gave it the look of meat. Loved it so much I'm making them this weekend.

Italian Tacos

Loved this recipe. Was looking for an Mexi-Italian dish for my sons birthday. Found this and was suprised at how much we enjoyed it. I did garnish with cottage cheese, however ricotta and mushrooms would be great too. Will be making this again.

Slow Cooker Barbeque

Bought a roast, and husband really wanted to slow cook with vegitables. I talked him to making BBQ sandwiches with it. He was not disappointed. I always use cola and water when slow cooking a potroast for BBQ sandwiches and drain before shredding meat. I have made this many times for party's and get rave reviews. Can even buy slider buns and serve at super bowl party's.

Made this in the summer with some fresh veggies from my garden. Can't wait to make this one again. Bit of advise though. I found that adding bread crumbs as it is served works much better and makes leftovers more desireable. Was a great recipe.

Seven Layer Salad

Made this Christmas day with Lasagna, and everyone loved it. Added crumbled bacon bits on the side and sent this recipe over the top. Will be making this again, and again. June 2012: For those that say the dressing is too thick, it really is recommended to be a heavy dressing. I added some sour cream to lighten it a little bit. I love this recipe and am making it again this weekend for an outdoor wedding. HINT make the night before you serve. Gives the dressing time to set up.

Chocolate Eclair Cake

I only gave this 4 stars, because the chocolate layer on top was to soft. I may have did something wrong. However, the flavors were amazing. I used tradional honey graham crackers too rather than the chocolate one.

Sour Cream Cheesy Potatoes

This was a great recipe. I prepared this for my family and wish I could say they were even better the next day, but they didn't last that long. I didn't have crackers so I took the advice of another reviewer and toped with fried onion chips. I will be making this one again and again.

Slow Cooker Pulled Pork

Had to give this 5 stars. Really the only thing I changed about this recipe is I added cola rather than root beer. I prepared this a day in advance minus the sause. About an hour before serving I placed in slow cooker and added sweet baby rays. I made this for approximatley 20 people and got rave reviews. So easy, will be doing this again for those "get togethers".

Irish Cream Chocolate Cheesecake

Made this with a for a dinner I prepared for my family and my Mother. I had never made a cheese cake and found this very easy. We loved it. My mother and I enjoyed it with a chocolate Martini. What a great way to end the evening. I'll be keeping this in my box for those special occasions.

GrannyLin's Barbeque Ribs Made Easy

WOW:D I love to cook, but not a big fan of Ribs. My husband usually cooks Ribs in the smoker or the Grill. Was not an option on this day, so I looked up a crockpot recipes and found this one. All I can say is that I will be making these again. Better than any I have add. I did a dry rub on them prior to broiling in the oven, and placed them in the crockpot. Set the timer for 4 hours. Removed ribs and placed on cookie sheet, basted them with Sweet Baby Rays, and broiled them till they got a good crisp. I think my husband was little jeoulous, all we would say is "I think I'll let you cook these again" haha. I agree with the reviews, 8 hours would of been way to much time.

Holly Christmas Cookies

My sister-in-law and I make these cookies every year. We save this cookie for last, because your gonna have to sit down and get messy. Using butter on your hands helps form the wreaths, and letting the mixture cool after adding the corn flakes hleps as well. A lot of fun and will be a tradion in our family for a long time to come.
