Stuffed Zucchini

I make this all the time in the summer! You really CAN add anything to this, and it turns out awesome - BUT I ALWAYS cook the meat first! Add fresh tomatoes, yellow squash, peppers and herbs from the garden - You can't hurt it, and this one does NOT disappoint!!!

Tender Italian Baked Chicken

I make this all the time!!!! (We call it Mayonnaise Chicken!)... I love it even more in the summer when I can add fresh herbs... don't be bashful! I'm particularly fond of basil, parsley and/or rosemary.... so tender you can cut it with your fork. I'd give it TWENTY stars if I could!!!!

Pickle Rolls

I make these all the time during the summer months - they are great snacks for out on the boat! But as I try to do the "low carb" thing, I omit the tortillas completely. Spread the cream cheese directly on the sliced ham, lay a quarter of a pickle on top, add a strip of cheese and even a slice of green, red or yellow pepper, and roll up. The cream cheese acts as "glue" and they stick together pretty well ~ stack them in a zippered baggie and toss in the cooler! (Be sure to remove the seed strip from the pickles and pat them completely dry, otherwise, you will end up with a bag full of goo at the bottom!!!!)

Brown Rice

My boss makes this, but instead of french onion soup, he uses consome and leaves out the worcestershire and basil.... there are NEVER any left overs! ! !

Potato Casserole

I've been making this recipie for years, and you just can't beat it! Try cream of celery soup instead of the chicken.... I always mix everything except the butter and cereal in a big bowl, then dump into the casserole. Then I melt the butter and mix with the cereal and then dump all that on top and spread around... don't forget that Kosher Salt! ! !
