FABULOUS RECIPE!!!! I made this for a Halloween party and it was a huge success! I doubled the recipe to make sure I had enough, I ended up with about 2 cups of bruchetta left at the end of the night. After doubling the recipe I did add a couple extra cloves of garlic. I made it in the morning, which gave it all day to really set in and let the flavors develop, which made it absolutely wonderful. I would even suggest making it the night before - it would be perfect the next night! I used block mozzarella, as suggested by other reviewers, cutting it in 1/8 inch slices. I placed the mozzarella on the bread and broiled it for a couple of minutes just until the cheese melted. Then I simply placed everything out and allowed people to put the bruchetta on themselves, it prevented the bread from becoming soggy. This will definitely go into my normal rotation.
