Cheese Fondue

We made this recipe as an appetizer for Christmas and it was a total hit. I followed the directions for preparation exactly as described in the recipe - except we added a few cloves of minced fresh garlic - and the foundue was creamy and tasted delicious. We used a good Chardonnay, high quality, imported Swiss and Gruyere cheeses and stirred the cheeses into the hot wine in quarter pound increments. We kept our electric fondue pot plugged in and after an hour, the fondue got pretty thick, so we just stirred in a bit more wine to thin it down and it was once again very creamy. We served with cubes of crusty bread, crudités and chunks of fresh pears & apples. This recipe made enough for 6 adults to nibble on all afternoon and everyone enjoyed it.

Italian-Style Swiss Chard

This is an excellent dish to accompany any meal! I like that the chard can be blanched ahead of time and then you finish by sauteeing the garlic & pepper flakes with the chard stems & leaves at the last minute. I like to top with some freshly ground Parmesan cheese to finish. This has been a hit with everyone who's tried it - even those who claim to not like greens. Note that the tablespoon of salt goes into the water when you blanch the chard - not into the final dish! After you sautee' the dish, then add only as much salt as you need to suit your taste preferences - we like to also add fresh ground pepper.

Mexican Baked Fish

This was an excellent tasting dish and extremely easy to prepare. My husband, adult son and teenage daughter all loved it. I used Mahi Mahi which worked very well. I seasoned the fish with garlic and fresh ground pepper before pouring on the salsa; I also let the fish "marinade" in the salsa about 30 min before topping with crushed tortilla chips & cheese and baking. The sour cream and avocado slices really added to it.
