Cheesy Ham and Hash Brown Casserole

WOW! My 13 year old made this for his big brothers when they came home from college. What a hit. He added mild green chiles and garlic. When it was done he topped it with fresh green onions. He did use low sodium potato soup and shredded parmesan, not grated. I cut the left overs into squares then froze them for a quick breakfast for the kids. Thanks for a great recipe.

Grilled Mahi Mahi with Lemon Caper Sauce

Absolutely Ultimate Potato Soup

This is a good soup. After reading the reviews I can see how the recipe would be bland if broth was used instead of stock. There is a big flavor difference between them. I did add more salt and a bit of red pepper flake, and used 1/2 & 1/2 to cut the fat. The amount of salt depends on the stock used. I did not use flour but thickened the soup with corn starch for my gluten free eaters. I did not cook with the bacon grease but did top the soup with sharp cheddar and bacon. I made my kids do the chopping while I was cooking the bacon so it didn't take as long as some suggested. My family liked it.

Tartar Sauce II

Great recipe! I have made this several times with many different fish. The last time I made it I did not put egg in it. (I was saving them for my breakfast) My 10 year old took one bite and said "Ma-you forgot the egg!" so I had to add it in right at the table. Well done Diane!

WOW! I made this to put over wild salmon, roasted potatoes and wilted spinach but my teenagers ate it all with pita chips before dinner was ready. I will double the recipe next time. I used jalapenos. As a professional chef I knew that the Bird's Eye peppers (AKA: Thai Peppers) would be too hot for my family. If you have a Caputo's Store near you they often carry Thai Peppers. I did add 1 tablespoon of fresh lemon juice. To those who found it too salty, it depends on what kind of salt you are using. Table salt, kosher salt & sea salts have different levels of flavor so start with half of what the recipe calls for and go from there. Keep in mind that depending on what kind of peppers you use the sauce will be green, yellow or red. Thanks you for a wonderful recipe. We will showcase this recipe at our restaurant in the near future.

Best Fried Green Tomatoes

This was great. I added granulated garlic & onion to the flour along with a pinch of cayenne. I only used egg whites and used heavy cream instead of milk to help the corm meal stick. I used 3/4 cup of corn meal and 1/4 cup of panko. The suggested sauce by another review was great. 1 cup mayo, 1 T dijon, 2t red wine vinegar, 2 T horseradish (I added cilantro & red onion too). After the tomato is cooled slightly I top it with lump crab meat, drizzle the sauce over it sprinkled with diced sweet red pepper. YUM! I will be serving these at my restaurant as next week appetizer special. Thanks Diana!

Detroit Hot Honey Wings

Wow! These were fantastic. I doubled the recipe and my family of 5 devoured every last one. I added garlic to sauce. I baked them for 30 mins then basted with honey, baked for 20 more, tossed in sauce and baked 10 more mins. Topped with sliced green onions...delicious!

Doris's Shrimp Salad

After reading all the reviews I cut the mayo in half, used green onions a dash of hot sauce and pinch of old bay and 1t of chopped fresh cilantro. It was a huge hit. I only use wild gulf shrimp. It makes a bug difference on flavor. If you use farmed the lemon will be overpowering as farmed raise have much less flavor. Brava Robin! I tip my hat to you!

Glo's Sausage Fried Rice

WOW! After reading the reviews I thought I would cut the recipe in half. So glad I did not! A family of 5 (with three hungry boys) We ate all of it! I used left over pork tenderloin instead and added more veggies, peas, green beans etc. It was terrific. Thanks Gloria!

Jambalaya

I used the Cajun Spice recipe on this site by Bobbie Jean. I added Cumin to it and omitted the pepper flakes so it wasn't too spicy. I also used red sweet peppers because our family does not like green. This is a great, easy recipe. I did not have chicken so I used shrimp instead. It didn't need the file powder, just let it reduce a little longer. It was delicious! Thanks Terri!

Chorizo Burger

Great alternative to the basic burger. I followed the advice of the reviews and added an egg! They were great. I used a mild chorizo to keep it kid friendly. My kids loved them! We used Hawaiian Bread Buns.

Pumpkin Muffins II

WOW! Great recipe! My 9 yr old son made these from a pumpkins he grew. He used butter instead of veggie oil. I went out and bought extra pie pumpkins to cook up and freeze so we can enjoy this recipe all winter long! THANKS!
