Cheesy Ham and Hash Brown Casserole
WOW! My 13 year old made this for his big brothers when they came home from college. What a hit. He added mild green chiles and garlic. When it was done he topped it with fresh green onions. He did use low sodium potato soup and shredded parmesan, not grated. I cut the left overs into squares then froze them for a quick breakfast for the kids. Thanks for a great recipe.

Grilled Mahi Mahi with Lemon Caper Sauce
I added garlic to the mix and topped it with Parmesan & panko then baked. It was great!

Absolutely Ultimate Potato Soup
This is a good soup. After reading the reviews I can see how the recipe would be bland if broth was used instead of stock. There is a big flavor difference between them. I did add more salt and a bit of red pepper flake, and used 1/2 & 1/2 to cut the fat. The amount of salt depends on the stock used. I did not use flour but thickened the soup with corn starch for my gluten free eaters. I did not cook with the bacon grease but did top the soup with sharp cheddar and bacon. I made my kids do the chopping while I was cooking the bacon so it didn't take as long as some suggested. My family liked it.
