Chantal's New York Cheesecake

Reviewed: Dec. 12, 2010
This was absolutely delicious. I made little to no changes save for the amount of flour to this recipe. I love it SO much and I will definitely keep using this recipe (and this recipe ONLY) from now on :D Oh, and I used a waterbath.

Grandma's Lemon Meringue Pie

Reviewed: Oct. 14, 2010
This was a delicious pie! There was a perfect amount of sugar to tartness in the lemon filling. I used a homemade honey graham cracker crust to go with this, since honey goes very well with citrus. I'm not very big on meringues, so I downed the egg whites to lnly 3 with 4 1/2 tbs of sugar, 1/4 tsp of cream of tartar, and a 1/4 tsp of vanilla extract. This may even be good with some pie crust and made into lemon pie bars! I'm most definitely going to try that next time around, since the lemon really holds up excellently. I love this recipe so much!

Quick and Easy Brownies

Reviewed: Oct. 4, 2010
I loved these brownies! For me, they didn't come out fudgy and thick, but I liked them the way they came out, anyways. Because it's cocoa powder, it's much easier to make with the cost of depth in chocolate flavor. My family isn't into the overly sweet sweets, so this was PERFECT for us. I substituted some of the butter with apple sauce.. about 3 or 4 tbs for a more healthy alternative. It didn't change the taste or texture much. Also, I only used 1 cup of flour. These were chocolatey, but not overly sweet.. just the way I love my brownies :-)

Chunky Monkey Pancakes

Reviewed: Aug. 27, 2010
these pancakes were delicious! I used walnuts instead of pancakes, omitted the chocolate chips, and put in more bananas. My family loves the bananas taste of it, so it was good. Also, I replaced 1 tbs of the butter with plain yogurt to be healthy :-) The yogurt did not overpower the overall taste, and the pancakes still ended up fluffy! Perhaps next time I'll try using banana flavored yogurt? Looking forward to the next time I make this :)

Eggs Benedict with Salmon

Reviewed: Aug. 27, 2010
These tasted really good. The sour flavor of the sauce matched very well with the salmon. The plain yogurt was, however, a bit pungent.. and the sour taste (in my opinion) over powered the eggs a bit. either way, this is very delicious. Next time, I will probably up the hot pepper, put in less lemon juice, and omit the mustard.

Blueberry Drop Cookies

Reviewed: Aug. 27, 2010
I had a lot of blueberries on hand and so I decided to make these cookies. I used butter instead of shortening, but also replaced 3 tablespoons of it with plain yogurt (it came out fine). Since I used the plain yogurt, I slightly cut the amount of lemon zest. I used vanilla extract, increased the blueberries by a little less than 1/4 of a cup, and replaced 1/4 c of the white sugar for brown sugar. With or without the changes, this recipe is very delicious :)

Brownie Biscotti

Reviewed: Aug. 19, 2010
This was very delicious! Biscotti is not meant to be overly sweet and this was chocolatey and yet not saccharine. My family isn't very keen on the super sweet things, so this was perfect for our taste :) The only thing I would like to comment on is.. I dried them out in the oven at 300 degrees. 375 will only burn them.

Black Magic Cake

Reviewed: Aug. 11, 2010
This was amazing. I was very confused due to the thin batter, but wow! Like magic, it ROSE at least an inch. It was delicious, not overly sweet, and light! I have baked this cake about 3 times now. This recipe has never failed me!

Bread Pudding II

Reviewed: Jul. 21, 2010
I did enjoy this bread pudding a lot and it was a very convenient way of getting rid of my bread. However, I think it needed a little less egg and a bit more flavor. Overall, though, it was tasty.

Cranberry Almond Biscotti

Reviewed: Jul. 15, 2010
This.. this right here is an AMAZING biscotti! I love how there is no oil or butter in it. Biscotti is a pretty expensive treat to come by and I'm elated to know that I can now easily make it! The only infinitesimal issue I had with this recipe was the fact that the consistency of the batter.. was sticky and also NOT a dough. It was more like a sticky cake batter type thing. So, I did not log it. Instead, I let it just spread out as a circle. Either way, I cut it into straight lines and the biscotti looked and tasted FABULOUS! I used both almond and vanilla extract, used half brown sugar, and added 1 tbs of lemon zest. next time, I think I'll just use all almond extract and cut down on the sugar a bit. THIS is my new all-time favorite biscotti!

Carrot Cake III

Reviewed: Jun. 17, 2010
This is a brilliant recipe! I made this cake incredibly healthy, though! I halved the recipe, used apple sauce instead of oil, used half brown half white sugar, and omitted a cream cheese topping ( my family's lactose intolerant ). This cake came out incredibly moist and delicious!

Award Winning Soft Chocolate Chip Cookies

Reviewed: Dec. 10, 2009
This is my number one go-to recipe. It's so very fabulous and I could never even dream of using this recipe edited. No. NO no no. It's PERFECT the way it is and so so so delicious! Tips: Never overbake cookies. Never. SLIGHTLY underbake them and let them bake on the pan after you take it out. ALSO always use an electric mixer. I've tried making this without an electric one, it didn't blend as well, so I could taste the individual parts in the cookie. Just... don't. These cookies are phenomenal

Banana Chocolate Chip Cake

Reviewed: Dec. 8, 2009
I doubled the recipe and placed it in a 13x9 pan. This way, the cake wasn't too thin and it was just so moist and absolutely delicious! I am most definitely going to be making these again.
