Easiest Pot Roast Ever

This was my first roast, so I wanted something fairly easy. It definitely WAS easy, and I was very happy with the results! It smelled so good all day long and I couldn't wait to dig in. I left out the onion and celery (picky husband) so I just added more potatoes (we love em). I also added some basil and oregano, I was trying to make sure it was extra flavorful. It was all very good, next time I might try to add more herbs and spices to kick the extra flavor up a notch!

Breaded Ranch Chicken

We did as others suggested and used part OO and part butter. I must say.. this is DELICIOUS!!! I felt naughty eating it, it was that good!

Garlic Pasta

We loved it! Mu hubby is hard to please so I am happy to have another recipe in my arsenal that he likes. I used quinoa noodles to make it even healthier!

Loved this!! I agree, it's a good base dish and I am already thinking of new things I will add next time. This time I took the other suggestions and added some olives and pine nuts. Wish I had parmesan for the top of it.. sounds delish!

Slow Cooker Pork Chops II

I loved this! I made it almost exactly like the recipe says with these changes: I used a whole can of broth instead of 1 cup to make sure the chops would be mostly covered while cooking and I think my chops were probably a bit thinner than the recipe wanted and were also bone in, so I cooked on low for 5.5 hours and when I went to take them out they were falling off the bone... so yummy and I love how simple and low calorie this is.

Creamy Slow Cooker Potato Soup

It's easy to make which is a plus. I don't love ham in potato soup so I should have just replaced it with bacon. It wasn't the best I have ever had but it was easy and tasty with some bread, so 4/5 stars!

Mimi's Zucchini Pie

This smells SO good when it is cooking! I didn't alter the recipe much, the only change I made was that I didn't use a crust. It doesn't need it, it's good without it so why add the extra calories, I say! So tasty.. I will use this base recipe and make this many more times with some changes and see what I can come up with :)

Quinoa Black Bean Burgers

I changed this up a bit and made it more of a lettuce wrap. I did more and bigger peppers, onions, garlic. More quinoa as well. Oats instead of bread crumbs. I was generous with all the heralthy yummy ingredients and just baked it in a 9x9 dish without separating into patties. Wrapped them in lettuce with some tomato slices, onions and ketchup... YUMMY!

Slow Cooker BBQ Chicken

I listened to the others and reduced the maple syrup by half and added some BBQ. I made a ton of sauce and it still felt a little dry. I think the cooking time was too much, so next time I will cook it a little less and have more of the sauce on hand to add in the end. Pretty good flavor!

Avocado Quinoa Salad

I thought this was really good! I was too impatient to wait for it to cool down so I tossed it all together and it was warm and yummy. I also added cilantro as others suggested, and used vegetable broth instead of chicken. It was great!

Quinoa and Black Beans

Awesome recipe!! I didn't change a thing, only thing I needed to do was add a little more veggie broth after about 15 minutes of cooking the quinoa and onion mixture because it dried out, I added the rest of the can (another 1/2 cup) and it all eventually cooked away also. I LOVE this recipe and this is my third time making it, makes a great summer dish!
