Holiday Chicken Salad

TO MAKE THIS HEALTHIER: Do not use mayo or seasoned salt. For my dressing I combine Organic Vanilla Yogurt with a small amount of Light Mayo, add Paprika, Parsley, Sage, Rosemary, Thyme, Sea Salt & Cracked Pepper. (I do not measure, just use the amounts you like). I also use yellow pepper for it's color and I like it better than the green pepper. I slice grapes and add those. With these healthier changes you still have a fabulous tasting chicken salad and no one knows you used yogurt, in fact when asked "what did you put in your chicken salad, this is so good" I let them know that the dressing is made with yogurt and they are pleased not to have the added calories and fat. Hope you like my version!! :)

Linguine Pasta with Shrimp and Tomatoes

Absolutely delicious. I did not have cajun seasoning so I combined the following (cumin, parsley, S&P, garlic, Old Bay, crushed red pepper, paprika and oregano) and tossed the shrimp in the spices. I also added fresh basil to the finished product and fresh parmesan. It was a party in my mouth, everything tasted gourmet and fresh and the hubby loved it. I also used thin spaghetti. Definitely will make this again!!

Basil Dill Coleslaw

EXCELLENT. The only diff thing I did was instead of using 1/2 c mayo I used a mixture of organic yogurt and light mayo. I also only put in about 3 pinches of sugar. Only after 3 hours of chilling it was fabulous - probably will be even better tomorrow. Thanks for a great recipe June.

Chicken Pot Pie IX

Great Basic Recipe w/ the following adjustments it was fabulous. I used chicken broth that I had previosly made to boil the chicken and veggies (I added parsley, sage, rosemary, thyme and marjoram to the broth as well as S&P). I used this broth after draining the cooked veggie mix instead of canned broth (I prefer using fresh ingredients). I followed the rest exact and had a fabulous pie baked @ 375 for 40 minutes. I also baked @375 the empty shell for 5 minutes.

Quick Sun-Dried Tomato and Basil Hummus

Absolutely FANTASTIC!!! Texture is perfect and goes great w/ Stacy's Naked Sea Salt Pita Chips. I did not measure the basil, cheese or olive oil - just eyeballed it and it was marvelous. Serving at a dinner party tonight.

Curried Turkey Salad

I did not measure any ingredients except for the curry, eyeballed the rest. The only major change was subbing organic yogurt for most of the mayo - this is delicious!! Oh I did not add sugar or peanuts, will add slivered almonds.

Actually Delicious Turkey Burgers

Brown Sugar Banana Nut Bread I

Fantastic Black Bean Chili

With a few changes this could be 5 stars. Changes: 2 cans black beans, 2 cans diced tomatoes and added cumin because you just need cumin in chili. Great, healthy chili option. Really enjoyed!! Also sauteed onion and garlic then added turkey with cumin to cook and then put everything in the crock pot to cook all day.

Apple Cider Chicken Marinade

Not very impressive compared to others I have tried on this site. I let the chicken marinate overnight as well. Was just okay as an entree, but was better the next day used in sandwiches and salads. Would never eat this alone as an entree in the future.
