Tacos in Pasta Shells

This was good and I will make it again, but it wasn't anything to write home about. I also used taco seasoning, but in addition to the chili pepper and salt, not instead of. I also added some garlic and cumin to the meat to help boost the flavor. Lastly, before adding the cream cheese, I added one can of diced tomato and green chile to the meat. I used a store bought taco sauce, which was ok, but it needed more than the 1 cup suggested. I topped it with light sour cream, which brought out a lot of the flavors. All around it was a hearty and satisfying meal, but it could have used a little extra punch in the flavor department.

Creamy Chicken and Wild Rice Soup

This soup was absolutely delicious. It's very hearty and the perfect comfort food for a cold day. I ended up using cans of chicken breast, but I still mixed them in with the cooked rice and followed the directions otherwise. I will definitely be making this again!

MMMMM... Brownies

Not that impressed. It wasn't bad, but it tasted more like less sweet cake. It wasn't dense or chewy, but it had a decent chocolate flavor. I won't make these again, as the boxed varieties taste better and are easier to prepare.

Slow Cooker Cashew Chicken

I thought this was a very tasty dish, although I could have stood to have more chicken in the mix, which is the only reason I'm giving it 4 stars instead of 5. I didn't have scallions so I used regular green onions, and I thought it was fine. Other than that, I followed the recipe exactly with the exception of adding the cashews. I was making my meal overnight for a dinner the next day, so I actually chilled it during the day in the refrigerator. I pulled the chicken pieces out of the sauce and let them warm in the crockpot, while I reheated all the sauce on the stove. As part of the reheating, I brought the sauce to a low boil and added the cashews. It turned out perfectly - the cashews were soft but firm, and retained their shape well. The whole mixture of flavors was really delicious. I was afraid of the fish sauce after reading other reviews on the website, but there was nothing "fishy" tasting about it at all. I will definitely make this again!!

White Turkey Chili

Delicious! I needed a recipe to give me something to do with the leftover turkey from Thanksgiving. I used the leftover meat, which was mostly dark meat, and less than choice cuts, and this recipe had enough flavor to bring life back to even the week old pieces of picked over turkey. The only thing I didn't do in this recipe were the beans, because my husband hates them. I definitely think it would have made the recipe even better, but it was hearty and flavorful without it.

Addictive Pumpkin Muffins

These muffins are yummy. At first I was a little disappointed because they flavor wasn't as rich as I was expecting, but then I realized that they are muffins, not cupcakes. The only thing I did differently was split the sugar into 2 cups of white sugar and 2 cups of brown sugar. They have a delicious, more subtle, pumpkin flavor that goes great with a warm cup of coffee!
