Salisbury Steak

Was searching for something to do with ground beef instead of meat loaf and I came upon this recipe. I'm thrilled that I did! I didnt have any canned french onion soup so I used a can of beef broth and then whisked in a packet of brown gravy mix. I'm sure the french onion makes it but mine still turned out delish! Kids loved it too! Will be adding this to my dinner rotation! Thanks!!!

Make-Ahead Turkey Gravy

God rest my Mom's soul but she was not a good last minute Turkey Gravy Maker! Therefore, I was not good at it either. I hated putting a jarred gravy on my homemade EVERYTHING Thanksgiving table. I received the "holiday make-ahead newsletter" with this recipe and was thrilled that it could be done ahead of time. So the week prior to turkey day, I prepared this recipe. My house smelled like Thanksgiving! The recipe is spot-on. You can tweak it to your taste buds but I followed the directions exactly and it produces a beautiful gravy I was proud to put on my table! Thanks for sharing! Cant wait for Thanksgiving next year!

Mouth-Watering Stuffed Mushrooms

Wow - awesome stuffed mushroom recipe! This was a perfect task for my aspiring 8 yr old daughter/chef! We followed the recipe exactly. All of our Thanksgiving guests raved over them! Thanks for sharing! This will be a staple at our holiday meals!

Awesome Slow Cooker Pot Roast

I made this on the stove and cooked it about 3 1/2 hrs. I seasoned and browned the meat then added all the other ingredients. I only used half the packet of onion soup mix since others reviews said it was too salty. It was salty but tasty so I peeled and cubed 2 large potatoes to help absorb the saltiness. It helped. I also added baby carrots and a few stalks of celery. I served it with mashed potatoes and the gravy was delish!

Lunch Box Hot Hot Dogs

My daughter is off to Kindergarten this year. And was trying to think of diff ideas for her lunch so she would not be bored. So we did a test run because I was concerned with her dumping hot water on herself...So I boiled some water and filled the thermos - let it sit for about 20 min with a dog (from fridge not frozen)- dumped out the hot water and wrapped dog in foil and put it back in the preheated thermos - made up her lunchbox as normal and 4 hrs later at lunchtime she sat at the table and went to town. Dog was warm and she thought it was so cool! And dont fret over ur kids eating a hot dog and it not being healthy... Trader Joe's makes Chick/Beef/Turkey dogs with no nitrates! Super low in cals - so u can feel good about switching it up! Thanks for the idea.

Famous Chicken Francaise

I have been making my own recipe for yrs but always felt like it had too much of a lemon bite. So I gave this recipe a whir and I am so happy I did!!! I followed the recipe to a "T". The only change I made was keeping my chicken in skillet and pouring the broth mixture over it. If you do this it will reduce and soak up in the chicken. I served it with Trader Joe's Lemon Pepper Wide Pasta (which I just tossed after cooking it with a splash of olive oil and added some fresh baby spinach - salt to taste. My husband said it looked and tasted of fine dining quality. I thought so to!!!

Fire Roasted Tomato and Feta Pasta with Shrimp

Made this last night and it was a delish - fast dish. I made a pound of angel hair and used the Fire Roasted Tomatoes with Green Chile from Trader Joes. While sauteing the garlic - then shrimp - I added about a half cup of white wine then added the tomatoes and heated thru. I poured the mixture over the pasta in a large pasta bowl. Well the pasta just soaked up the sauce.... So next time I may up the wine to a cup or even reserve some pasta water to mix in. Other then that - really good dish! Thanks for the idea of adding feta to pasta!!!

Chicken Fiesta Salad

Delish!!! This is a great way to use up left over corn on the cob from the night before. I sprayed mine with some PAM - seasoned it with Morton's Season Salt - and threw it on the grill for a few and cut it off the cob! I had some left over cilantro so I snipped some into the corn/bean mixture and used up half a lime I had cut. Super fresh dinner salad! Thanks for the idea! Oh and the chicken must be done on the stove top as to not dry it out on the grill. The possibilities are endless with this salad!

Cottage Cheese Chicken Enchiladas

Made these for Cinco De Mayo dinner for my family. Everyone loved them... and then loved the leftovers as well. Takes a bit of prep - but you really trim fat/calories by using the cottage cheese. Combining w/just a bit of sour cream gives it that succulent creamy flavor. This dish is very versatile as well if you would like to make it vegetarian... just saute bell peppers/onions - add some black beans and you have an awesome meal! Thanks so much!

Braised Balsamic Chicken

I've made this several times now and love it each time! I have sauteed fresh chopped eggplant and zucchinni (tis the season) with onion... I've thrown in fresh garlic and tons of fresh chopped herbs (basil- lots of rosemary - thyme - oregano). If you add another can or tomatoes (w/a bit of water to thin it) you can get enough sauce to put it over angel hair pasta... some crusty bread and salad and you have a gourmet dinner! I love it with garlic mashed and sauteed green beans. I've made a lot for company too... just caramelize your onions - pan sear your chicken - then layer it in a large rectangle baking dish... mix up the tomato mixture and pour it over... top it with foil and put it in over for a half hour on 350. Possibilities are endless : ) Thanks so much for this awesome recipe!

Great Pumpkin Dessert

Made this for a Halloween Open House and all that tasted gave a thumbs up! Great twist on traditional pumpkin pie... crust is on the top. I did take a few suggestions from others - Sugar 1/2 cup - Cut cold butter into cake mix which I sprinkle over the cake then added crushed nuts then sprinkled cake topping over the nuts. I will try it next time with a spice cake mix. This is a keeper! Thank you!

Gourmet Pretzel Rods

Made these last night for the holidays. Bought Dark Chocolate disks from AC Moore... Used the double boiler method to melt... First bag was a bust. I learned with the second package that you MUST keep the water boiling the entire time you are melting/dipping. You cant turn the flame down/off after the chocolate melts. If you do, it turns rock hard like fudge. This is probably why melting in the microwave doesnt work out well. So keep a steady boil going while dipping. I dipped a whole bag of rods and then about 1/2 bag of pretzel snaps (waffle shaped) just half the pretzel. I sprinkled them with some green/white mint chip decorations I found. They ended up tasting like a Mint Girl Scout Cookie! This recipe is really versatile! Thanks for sharing!

Grandma Ople's Apple Pie

Made this along with my Mom's traditional Apple Pie recipe for Thanksgiving. Well... it was a huge hit! There is nothing like your Mom's Apple Pie... but this was just as good (if not better) with just a slight twist on tradition. If you are looking for a **** apple pie recipe, you have to try it. It's no fail! I did pour the liquid mixture on top of my apples and tossed in a bowl - then added them to the crust. Slapped on the lattice top and used a pastry brush to coat the lattice... oh and I also sprinkle a bit of sugar on the top for that glistening effect. Everyone really loved it!

Downeast Maine Pumpkin Bread

Wow... this was awesome! I made it for Thanksgiving but me and my family ended up eating half the loaf 10 minutes after it came out of the oven. The house smelled wonderful! Good think I made an extra load for dinner the next day! I followed the recipe to a T or the first go around. I have altered the oil to apple sauce and I've added fine chopped walnuts. I plan on giving this bread to every person I visit this holiday season. It really is delish! Thanks!!!
