Quick Lemon Poppy Seed Bread

Reviewed: Nov. 14, 2011
Amazing! I added lemon zest to the batter & a quick glaze I made with lemon juice, powdered sugar & zest. I think it lasted an entire 20 minutes at the office. Will make again.

Cranberry and Cilantro Quinoa Salad

Reviewed: Nov. 14, 2011
DELISH! I forgot my carrots & used cumin instead of curry powder. I added some minced garlic & EVOO. Great recipe the way it is or change to what you have in the fridge.

Quinoa with Chickpeas and Tomatoes

Reviewed: Jul. 30, 2011
Great, easy recipe! Make sure you rinse your quinoa well to avoid a "soapy" taste. I used vegetable broth to keep it vegetarian also. I used some tomatoes & cucumbers out of my grandma's garden and did cilantro instead of parsley. YUM!

Great, easy recipe! Will make again. I added raisins, did 1 cup white and 1 cup brown sugar and only did 3 cups of sugar for the frosting. AMAZING! Thanks for the easy recipe!

Cake Balls

Reviewed: Mar. 11, 2011
Great recipe and easy! I used white cake with cherry frosting. I thinned my almond bark coating with some vegatable oil and it wasn't too think to rolls the balls in. I agree on getting them nice and frozen before even thinking about dipping them in the chocolate.

Spicy Corn Dip

Reviewed: Feb. 6, 2011
I added some hot sauce but then worried it would be too hot. Don't worry. With all that sour cream and mayo it cools it down. I'm a sissy for hot stuff and this was perfect.

Chocolate Chip Cheese Ball

Delish! Can't go wrong. I thought the cooling/set up time was much faster so don't hesitate to make this only a few hours before if you need something last minute.

Pineapple Upside-Down Cake VII

Reviewed: Nov. 21, 2010
Yummy & easy. I followed the others. Did not use an iron skillet but a 9x13. Added extra butter, extra brown sugar and used the pineapple juice in the cake batter instead of water. I actually cover with foil about half way thru because I thought it was brown too fast. Thanks for the easy recipe.

Homemade Black Bean Veggie Burgers

Reviewed: Feb. 1, 2010
Best recipe ever! I too added about 1/4 cup of frozen corn to the mixed. I was nervous when I started forming the patties since the mixture was super slimy and sticky. But I formed the patties anyway, placed them on my stoneware pan and baked. I added about 15 minutes total of bake time because my patties were extra thick. They turned out great dispite the slimy start and I will be make these many more tmes. Thanks for a GREAT recipe!

Creamy Spinach-Stuffed Portobellos

Reviewed: Jan. 26, 2010
Quick & Easy. I added some sauteed garlic and black pepper. Try to cook down the tomatoes as much as possible. With the juicy tomato and condensed soup, there seemed to be too much liquid when I pulled them out of the oven. Overall a great recipe that you can spice up anyway that you want.

Spinach and Leek White Bean Soup

Reviewed: Jan. 26, 2010
I too added the thyme and rosemary rather than the cumin. Once the couscous had a chance to soak up the broth, the spices became overwhelming. I added 2 additional cups of vegetable broth and a can of diced tomatoes. Only then was it semi-enjoyable. Sadly, not one of my top 10 recipes although it has great ingredients. Sorry.

Allie's Mushroom Pizza

Reviewed: Jan. 26, 2010
Good basic recipe but I had to add a few things to jazz it up. I added fresh spinach, garlic and purple onions. I had a small can of tomato sauce so I stirred in a little oregano and basil and poured it over the veggies before I topped it with the cheese. Overall good you just have to make it your own with the things you like.

Good taste but original recipe needs tweeking just like everyone says. I too had trouble with it falling apart in the pan (even with 2 added eggs). The ulimate solution was definitely adding the flour and vaaalaa! Perfect!

Barbeque Tempeh Sandwiches

Reviewed: Jan. 1, 2010
I prepared the tempeh like an other reviewer mentioned. I boiled it for about 20 minutes in vegetable broth and used a mesquite BBQ sauce. The texture takes a little getting used to if you think you are about to bite into a sloppy joe like sandwich. Overall a good recipe to use if it's your first time with tempeh. Enjoy!

Light and Fluffy Spinach Quiche

Reviewed: Jan. 1, 2010
Very good and easy to make! I added 3 cloves of garlic, paprika, salt, an additional egg and mushrooms. I also sauteed all the veggies first because I didn't want any added liquid. I used regular sized (not deep dish) pie crusts and it was ther perfect amount for two of them. Yummy! I'll make this one again.
