Banana Sour Cream Bread

This had very good taste. You really can't taste the sour cream. I made some changes that I often make to recipes without them making any difference to taste in my opinion. I use 1/2 King Arthur white whole wheat four and half all purpose, 1/2 Splenda 1/2 sugar and I through in about 2 Tbs of ground flax seed. I also had to half the recipe, I only had 4 bananas. Technically half the recipe calls for 3 but I used all 4. I really liked this bread. It came out lighter/less dense than my traditional recipe and also less moist, which I was looking for. Obviously the changes I made may have altered the outcome but in my other banana bread recipe they don't. I was looking for a recipe to try that might give me a lighter result and I think this did. I also thought this bread was less bitter than my normal recipe. I usually don't care for banana bread because I find it a little bitter. I use baking soda without aluminum so that is not the reason for the bitter taste I usually get. I would make this again and I recommend it. The only reason I give 4 stars is I think most people like banana bread more moist than mine came out, but again it might be the changes I made.

Lemon Coconut Squares

Too much crust. I made the adjustments suggested, lowered the sugar to 1 1/4 c and increased the lemon juice to 3/4 cup, but there was too much crust and not enough filling for my taste. I also normally love coconut but next time I make lemon bars I will look for a recipe without. I think this would have tasted better with cool whip or whip cream on top rather than coconut.

Pecan Pie Bars I

This is absolutely to DIE for! There are not words to describe how delicious these are. Sweetness is exactly perfect. I used a little bit of Splenda 1/2 cup in place of 1/2 cup sugar and for half of the flour I used white whole wheat flour. I don't think this changes the flavor at all, but makes me feel a little better about how many of them I eat!!!
