Chewy Chocolate Cookies II
Great cookies! My family's favorite, especially when I chop up a dark chocolate bar [or two] and mix it in! I use real butter, and Hershey's Special Dark cocoa powder. Dough needs to be chilled if you want to avoid a gooey situation. Also, baking parchment works wonders for these; makes removal and cleanup so simple. The more you bake these, the better they turn out, as ovens all vary and it takes time to fine tune the details like exact time, temp, position of oven racks, ect. My kids call these "Death by Chocolate Cookies."

Lemon Pudding Cake I
WOW; this recipe is definitely a winner!! I made both the lemon and the coconut lime variation that someone suggested, and added some Bird's Eye fresh frozen coconut. My family cleaned all of it up in no time, begging for more! I served the lemon cake warm, and the coconut lime was thoroughly chilled when it was served. Wonderful with a dollop of real whipped cream and fresh grated lime zest. The only thing I changed was to reduce the sugar to 1 1/4 cups. This will make a refreshing dessert during the hot summer months served cold. It can easily be dressed up for an elegant dinner served in individual custard cups and garnished, or as a homey weeknight dessert with comfort food. If the egg whites are beaten correctly and directions are followed, this recipe is really easy to master. Try it folks! Thanks for sharing!!!

Creamy Rice Pudding
This has become a family favorite! It's even a nice dish for a brunch, potluck, etc. For that, I usually chill, then top with [real!] whipped cream. I've been adding a sprinkle of mace, and using brown rice for extra nutrition. It's still delicious and the brown rice I buy is a medium grain rice. I agree that a short or med. grain rice definitely gets creamier, better results. Great recipe; thanks for sharing!
