Waffles I

I used white whole wheat flour, and followed other reviewers suggestions to whip the egg whites first, add additional vanilla and some cinnamon to the batter. I also used 1/2 melted coconut oil and 1/2 vegetable oil. My batter was a bit thick so I also added about 1/4 cup of cinnamon applesauce to thin it out a bit. The waffles cooked great and were very tasty! I am going to try to freeze them now to see how that works as well.

Easy Microwave Chocolate Cake

A fun cake. I also added an additional 1/2 cup of sugar and additional 2-3 Tbls of cocoa pwdr. I think adding chocolate chips as some reviewers mentioned would be awesome too, but I didn't have any. Next time!!! Split the batter in two and cooked in two extra large coffee cups for 2 1/2 min. Came out great... more like a brownie and very tasty!

Easy Tuna Patties

Very good and easy. I used Old Bay seasoning as other reviewers mentioned as well as finely chopped celery and LOTS of pepper. I also cooked them in coconut oil which I believe was what made them even better! My husband ate three even though he said he hates tuna patties... he loved these!

Banana Banana Bread

Texture is very nice and color comes out good as well. I tried this recipe because I have a grandson who is allergic to milk/soy and so I was able to cook this one (using his special margarine) for him to eat. My regular recipe is much better in flavor I felt. This just didn't have much pop when we ate it. As I said though, it did work for his allergies, so that's important too!

Whole Wheat Blueberry Muffins

Excellent recipe and I feel better about eating them because they are whole wheat. I did use white whole wheat flour and 1/2 frozen and 1/2 fresh blueberries and I did use the brown sugar, cinnamon, flour, butter topping on them that another reviewer suggested. They were easy and very tasty!!!

Skillet Sole

Simple but kind of plain. I added garlic powder to taste, lots of cayenne pepper, and a sprinkling of Old Bay fish seasoning to give it some kick. After I did that, seemed much better flavor wise. My fish didn't hold together, but it was still fine in pieces. Again, though, for a fish dish, super simple!!

Spiced Apples

They look pretty and are very easy, but I had to buy "red imperials" instead of Red Hots and the taste was not as hot and spicy with those candies. I would definitely try to find "Red Hots" to make this recipe.
