Creamy Mustard Pork Chops

This is a great recipe that's easily made from the staples in your pantry. It has a rich flavor that can be tweaked to your liking. I add a little bit of Worchestershire sauce, but that's about all I changed. It's become a regular in my dinner rotation, and one of my husband's favorites.

Turkey Wild Rice Soup II

This was absolutely fantastic! I made it with turkey tenderloins I got from the butcher at the grocery store. I substituted broccoli for the celery, and chicken broth for the turkey stock. I will definitely be trying this again with Thanksgiving leftovers!

Delicious Ham and Potato Soup

This soup is deee-LISH-ous! I made a few minor modifications. I used chicken broth from a can instead of water and boullion, and fresh broccoli in place of the celery. I sprinkled a pinch of cheddar cheese on top of mine, but it tastes great without it it too. I loved every bite, and so did my husband. He says this recipe is a keeper. We watch our calories, so this soup will work perfectly in our menu planning. Oh, and it's very filling. A cup and a half (350 calories) was plenty, so we have leftovers for a low cal lunch too!

Meatball Nirvana

Really just ok for me. I used 85/15 ground beef, and I thought they came out pretty dry. They could really use some sauce. The flavor was ok - kind of meatloafy, as one reviewer said. In fact, the ingredients are almost identical to a meatloaf recipe I got from this site! Also, I cut back on the Italian seasoning and oregano, and l felt they still overpowered the flavor of the meatball. My husband said "they were alright, but not special". I'll look for another recipe next time I make meatballs.

Bacon Roasted Chicken

I made this recipe using chicken leg quarters. I used all the same seasonings, and arranged a slice of bacon on each one. They were beautifully roasted in about 90 minutes, and fall-off-the-bone tender and delicious. I crumbled the perfectly toasted bacon slices into my mashed potato side dish. I'll definitely be using this one again!

Tuna Melt Wrap

I tried this recipe because I was looking for something different for lunch that was fast and easy. I'll give it points for fast and easy. But otherwise I wasn't really impressed. I thought the amount of mayo was too much. Also, I cooked these up in the broiler, and a few of the tortillas were scorched black and unedible, even though I didn't broil them for as long as was called for. I pulled them out when they started smoking! Finally, the calorie count on this was a bit high considering the small serving size and the use of light mayo. I'd have to eat more than one serving to get full, and that's more calories than I want to consume for lunch.

Chicken Fried Chicken

I've made this a few times now without any changes to the recipe. I'm impressed how delicious this lower calorie version of fried chicken is. And it's so simple to make. The chicken comes out very moist and flavorful, and the coating is crisp and tasty. Definitely worth a try if you're watching your calories and you love fried chicken.

Broccoli Chicken Divan

I really enjoy this dish. It tends to be a little soupy, so we serve it over rice. It's easy to season this recipe to your taste, or change up the vegetables depending on your preferences. I especially like the low calorie count on this. Even serving it up with rice, it comes in at less than 500 calories for a complete meal. I will omit the butter and bread crumbs in the future though. The topping doesn't add much, in my opinion.

Charley's Slow Cooker Mexican Style Meat

I have to agree with many who said that this dish is more about being hot than it is about flavor. I followed the directions fairly closely, although I did scale back on the hot pepper sauce a bit. It was indeed extremely hot. I used beef broth as the liquid base instead of water. If it weren't for that, this wouldn't have had much flavor at all. I rescued the dish by adding some home made taco seasoning to the crock pot toward the end. The meat was very tender, though. I'm giving this 3 stars because I think it has great potential if you adjust it to your own taste. As is, it was just ok.

Slow Cooker Chicken Stroganoff

I had my reservations about this initially, but it was delicious! I made it with cream of mushroom soup and low fat onion and chive cream cheese. Like other reviewers, I added a few tbsp of white wine while the chicken was cooking. The chicken came out flavorful and tender. I served it over No Yolk egg noodles. Fabulous, and maybe even better on day 2! It's a tad on the salty side, so don't add any salt. It was also a bit thick for my taste, so I added a splash of milk to make it a little more creamy.

Layered Chicken and Black Bean Enchilada Casserole

Wow! This was delicious! Easy to prepare, although not very quick. Made 2 small changes: No chile peppers - not a fan of those. Also, used white American cheese for the first layer of cheese, which is used a lot in Mexican restaurants. Fabulous. Oh, and I used and 8x8 dish instead of 9x7, because that's what I have. Worked out great. Says it makes 8 servings. But between me and DH, we ate all but 1 small serving! Definitely a keeper for me.
