Slow Cooker Chicken Taco Soup

Like others have said, using a dark beer is important. I used a Imperial Stout made with Ghost peppers and it was amazing with some sharp cheddar shredded over the top.

Bourbon-Mango Pulled Pork

Greek Pasta Salad with Roasted Vegetables and Feta

This is one of the best from scratch pasta salads I've ever made! I didn't use eggplant, squash, or arugula, but sub'd lots of oven baked green, yellow, and orange peppers. I didn't see any other complaints about it, but I thought there was WAYYYY too much garlic in this recipe. I also used an extra tablespoon of EVOO and had to add even more the next day as it had dried out quite a bit. Overall a great recipe.

Blackened Chicken

This is one of the easiest, tastiest blackened chicken recipes I have ever found. I think pan searing it is the way to go but you can grill it with nearly the same results.

Brazilian Black Bean Stew

This stew has a great taste and wow'd everyone that tried it. My one knocking point is that it didn't have much of a kick. I added some Cumin, Tabasco, and Paprika and that did just the trick.

T's Sweet Potato Fries

After I baked them in the oven I tossed them in a deep fryer for about 30 seconds. Not exactly healthy I know but they weren't very crunchy right out of the oven

Wisconsin Native's Beer Cheese Soup

This wasn't as thick and creamy as I had hoped for, but it had a very good taste and I can't complain. I actually used three more cups of cheese than the recipe called for to thicken it up a bit. Next time I might try using cream of chicken instead of chicken stock just to get the rich consistency I'm looking for.

Chicken Pot Pie II

I made this with a few minor changes, mainly different vegetables and less potatoes. I also used turkey leftovers instead of chicken and it worked great. It was a delicious pot pie but I prefer a little thicker and tastier filling so next time I will sub cream of chicken for the broth and flour.

Hearty Baked Rigatoni

The first time I made this dish I followed the original recipe and I thought it was a bit too cheesy. So when I made it again tonight, I used half the amount of all the chesses except mozz; and nearly twice the amount tomato sauce. I also added half a teaspoon each of onion powder, garlic powder, and sweet basil. It was excellent! It was indeed "hearty," I didn't feel the need for any side dishes and it still fed 3 college aged men.
