Raspberry Oat Bars

I made these for my daughter to take with her on her way out the door in the mornings. She loves them, her friends love them and now my mom asks for them on her way out the door in the mornings!! They are a little sweet for my taste, so I'm going to try using a little less sugar. I cut them into bars and wrap each one and stick in the freezer. It doesn't take them long to thaw.

Pie Crust IV

Great, easy pie crust!!! I didn't have enough shortening, so I did half shortening and half chilled butter. I also doubled the recipe for a 2 crust pie.

Pillsbury Crescents Turkey Cranberry Pinwheels

I used these for a holiday open house and they were wonderful!! Instead of Monteray Jack, we used Swiss. Ocean Spray has these tubs of cranberry chutney - I think they are called Cran-Fruit. I used the one with an orange flavoring. Ahead of time, I prepared them, rolled them up, wrapped the logs with Glad Wrap and placed them in the fridge. This made them easier to slice the day of the open house. A great holliday appetizer!

Simple White Bread

Wonderfully easy recipe! I use my Kitchen Aid, starting with the paddle and finishing with the dough hook. Makes great garlic rolls!!

Soft Chocolate Cookies

Yummy cookies! I haven't had a chance yet to make them after letting them sit in the fridge and they were fine, just spread a little bit. The choices are endless with these - great dough by itself, can't wait to try adding things!

Coconut Sour Cream Cake

My dad is diabetic and he really likes coconut, so I thought I'd try to make this recipe as sugar free as I could for Father's Day. I used a reduced sugar yellow cake mix (1/2 sugar, 1/2 splenda - couldn't seem to find a white cake mix like that). I also added coconut extract instead of almond to the cake mix. For the frosting, I used just a cup of Splenda instead of sugar and found sugar-free Cool Whip. I mixed the sour cream, sugar and coconut and let it sit in the fridge while the cake baked and cooled. I don't often use coconut, so I forgot about it being sweetened until I was adding some around the sides of the cake! Whoops! I also toasted a bit of coconut for the top of the cake. My dad said it was really good and asked for a second piece!!! He licked the plate clean both times, so I'd say it was a hit!!!

Caramel Bread Pudding

I've made this twice now. The first time was really runny, but the second time was much better. I learned a few things. One is to let the brown sugar and hot water sit long enough to dissolve the brown sugar. Two, instead of pouring the sugar and water over, drizzle it so the syrup soaks into the bread. When I poured it, it mostly collected on the bottom. I did not add the 1/2 cup sugar either time and it was still really sweet!

Chocolate Cream Puffs

Very good and easy! To lighten it a little bit, I just filled the chocolate puffs with sweetened whipped cream and left out the cream cheese

Evelyn's Rolled Sugar Cookies

I also found it very soft. I think I would have done without some of the milk. I used 1/2 cup and I think that was too much. Next time, I will try without any milk and see how that does.

Awesome Carrot Muffins

My husband didn't care much for this recipe, but my kids love it! I usually use 1/2 cup oil and 1/2 cup applesauce. Great breakfast and they freeze well too!

Stuffed Shells III

My family loves this recipe! My 3 year old eats shell after shell!! We're not a mushroom family, so I leave those out. I scoop the filling into a big ziploc bag, close the top up, make a small cut in one of the bottom corners and squeeze into the shells - no mess! I also divide this recipe into two 9x13 pans. We eat one and the other goes into the freezer for later. Freezes really well!
