Broccoli Cheese Soup V

I looked at every broccoli cheese soup recipe on the site and chose this one for its simplicity of ingredients. It is a wonderful basic recipe. Changes I made this time: added a chopped clove of garlic to the onions, only added 1 1/4 lbs Velveeta, and briefly used my immersion blender. Next time I think I will only use 1 lb of Velveeta. Seems almost too processed-cheesy with the recipe as written.

Slow Cooker Buffalo Chicken Sandwiches

Served on toasted buns with crunchy coleslaw (no coleslaw dressing--just the greens), blue cheese, and blue cheese dressing. It was a hit with my husband!

Black Bean and Salsa Soup

Much more flavorful than I expected. I kept one can of beans whole per other reviewers' suggestions. I also added a bit of garlic powder and a splash of lime juice. Instead of a whole cup of salsa, I had to substitute half a cup of Rotel and half a cup of salsa. Served with sour cream on top and cheese nachos.

Easy Tilapia with Wine and Tomatoes

A great base recipe--one of our favorite ways to eat tilapia. I bake it in a glass 9x13 pan tightly covered with foil at 425 for 18-20 minutes. I use canned tomatoes for ease and reduce the amount of wine to about 1/4-1/3 cup. Dried basil works in a pinch. I've also added capers with great results.

Simple Ranchy Breaded Fish Fillets

Quick and flavorful way to fix tilapia! I mixed the bread crumbs and dry ranch in one bowl. Then I dipped the tilapia in egg and dredged in the bread crumbs mix. I omitted the oil. Also baked the fish. I'll have to try cooking this in the skillet, as it was not perfectly crisp from the oven.

Salsa Chicken Burrito Filling

I shouldn't give this five stars, because I amend the recipe by so much. I put 3-4 frozen chicken breasts in the slow cooker, topped with a low sodium taco seasoning packet, and a mixture of one can cream of mushroom soup and 1 cup salsa. Cook on low 8 hours. Shred chicken and serve with salsa, sour cream, brown rice, and shredded cheese.

Black Beans and Rice

Wonderfully easy weeknight dinner. I had to substitute garlic powder in a pinch, and also subbed chicken broth for veggie. Added a can of drained diced tomatoes and kosher salt and pepper to taste. I think it needs some chips, guac, sour cream and salsa on the side!

Beer and Brown Sugar Steak Marinade

Fantastic! The flavors work so well together. I did boil the leftover marinade and serve au jus with the steak. Some people may not do this for fear of bacteria, but we're fairly laid back when it comes to the matter of taste.

Basic Microwave Risotto

Earns its five starts due to the fact that it cooks in the microwave, only about 4 stars for taste. I eliminate the onions, due to a picky eater in the house, and decrease butter by a tablespoon. Have substituted chicken broth for both the wine and veg. broth in the past. I add a dash of cream at the end of cooking. Great for a quick side dish! I do have to cook the butter less in micro to keep from burning.

Incredibly Easy Chicken and Noodles

Good, basic recipe. I decreased the amount of seasoned salt and added some basil and parsley. I also added quite a bit of ground black pepper as I like a peppery flavor. Finally, I chopped up some carrots and threw them in. The night I made this it was like creamy chicken noodle soup, but the leftovers were the consistency of a pasta dish. Tasty either way, but something to be aware of if you plan to eat the leftovers.
