I like to experiment with my cooking; ethnic cooking has so much in common with spices, so I find that TX chili is delicious over spaghetti, and pesto tastes great with jalapeno peppers!
My favorite things to cook
I enjoy baking, and I love making cookies. I have been experimenting with the Mexican bizcochito recipe, which is a delicate cookie made with lard, served at holiday times and for special occasions. I made some with chipotle powder and some with lemon-raspberry frozen mix. Wow!
My favorite family cooking traditions
Thanksgiving at our house was wonderful. My mom was the best cook ever, and it was nice to see all the family gathered at the table, with our children running around everywhere. I love Fall, and all the scents associated with Fall.
My cooking triumphs
For awhile, my bundt cake was the best; before that, it was my pumpkin pie. Now, I love making pumpkin cheesecake; lemon-ginger cupcakes; hazelnut cookies--everything from scratch.
My cooking tragedies
I cannot make a decent tortilla or a red enchilada sauce: I live in the shadow of my mom and two sisters who are wonderful cooks, but then, they can't make marinara sauce or bake delicate cookies or filled cupcakes!

Pork Carnitas
I have the meat cut up in cubes & I brown it in bacon fat. I simmer it in the oven at 300 degrees, instead of the stovetop- I add a cup of Coke, a jalapeño, and a clove of crushed garlic to all the other ingredients. After 2 hours, check for tenderness; adjust seasonings, and separate the cubes a bit. Bake another hour. Meat will be crispy on the outside, and very juicy and tender. Makes great tacos or burritos with chopped tomatoes, onions, jalapeño sauce, and cilantro. Guests will devour these carnitas!

Pumpkin French Toast Bake
Made this recipe after breakfast, to use up the pumpkin purée in the fridge, so let it soak up the goodness; baked it just before the new episode of "Revenge," and served it drizzled with Hungry Jack butter Syrup, a dollop of KoolWhip, and lots of crisp bacon! I love the pumpkin in it, and the spices scented the whole house! I halved the recipe; used a tad more spices, let it sit in the fridge 6 hours, and baked it in a brownie pan lined with nonstick foil.

Stuffed Cabbage Rolls
Cabbage is so reasonable & so good, & these cabbage rolls are better than some I ate at a local Greek restaurant! If you have some leftover homemade marinara, it works better than canned tomato soup!
