Penne with Chicken and Pesto

YUM YUM! I made this tonight with some very garlic-y chicken strips I wanted to use. I sauted the chicken strips with onions in butter. I wanted more sauce, so I poured in 2 c cream(from the top of raw milk), and added about 1 c leftover peas and simmered them together. I added a heaping 1/4 c of home made pesto I had frozen in ice cube trays this past summer and heated the whole thing through. We mixed the sauce and chicken into 1 pound of penne right as we were ready to serve it. This was a huge hit, very quick and easy, and I will likely serve it regularly. Thanks MARYSTEVE!

Sloppy Joes II

I made this with 2 # ground beef and doubled the rest of ingredients. I left out the green pepper. I added diced onion after the meat was browned-we liked the texture and flavor of the onions this way. I also added a good splash of apple cider vinegar because before that the flavor was just like SWEET ketchup. IMHO, the apple cider vinegar made all the difference. We were in a hurry and just warmed it through without the simmering and it was still flavorful and yummy. We liked the thickness, as it stayed on the buns well, even piling it high! Great basic recipe, but adjust sweetness according to your family's likes. Thanks Tamara!

Honey Wheat Sandwich Rolls

These are incredibly good rolls! My children asked me to make more, so after my first batch yesterday, I made them again today. I only made slight changes according to some of the reviews. I left my measuring spoons slightly rounded on the salt and the yeast, warmed the milk, and added 4 teaspoons vital wheat gluten. I hand shaped them into 20 dinner rolls. Thank you SEEFREE!.

Cajun Style Baked Sweet Potato

These were really good! I didn't have the herbs, so I only used the spices and brown sugar. I cut 4 large sweet potatoes into chunks, skins on, and tossed in a zipper baggie with oil. Then I added the spices and tossed again. I baked them at 400 for about 40 minutes. We loved the sweet and spicy flavors together. My tongue doesn't like "hot" as well as my family does, but even I didn't mind the tingle!
