Fiery Fish Tacos with Crunchy Corn Salsa

FIRE AND LIME! oh my gosh GROSS all you could taste was FIRE AND LIME! juice of a lime is way too much for the salsa, and 2 Tbsp of cayenne is way too much for the spice-mix... listen, I love my tang and my spice, but this was like eating lime juice and cayenne, you could not taste anything else... just FIRE AND LIME! If I ever make these again, I'm changing EVERYTHING!

Caramel Macchiato Ice Cream

I used to work at Starbucks, so I know how this SHOULD be done... I made half coffee ice-cream and half vanilla ice-cream... I fashioned a couple dividers for my container so that it looked kinda like this -> ( || ) from the top and tapered down to look like this \ V / from the side (so the caramel doesn't pool at the bottom) then I poured the coffee icecream on one side, and vanilla on the other -> (C||V) then I poured chilled caramel in between the two dividers... then chill in the freezer for a short time... like 5 mins, to let the caramel just start to set... then, carefully, pull out the two dividers, and run your stirrer (chopstick, knife, w/e) back and forth across the three flavors so that your caramel goes from this -> || to looking like this -> {{ ...ish With these changes, it was DELICIOUS aaannnd Accurate! of course, after it hardened in the freezer, I served this with a little more caramel drizzle on the top!

Grilled Cheese Sandwich

growing up we always had this made with American cheese... I keep to that tradition, but I mix it up a little - I do one slice american and one slice pepper jack, I brush a little olive oil instead of butter (no saturated fats) and serve with Tomato Basil Soup

Pecan Chicken Pockets

Fantastic! I'm surprised more people don't LOVE this! My hubby wants me to make up a bunch to keep in the freezer for when we need a quick lunch on the go, for this I would make my own bread of course... Loved the recipe and we will be having this quite often! :)

Maple Nut Angel Food Cake

Fantastic! I didn't change a thing and it was perfect! I would like to say to anyone who doesn't know better, make sure you beat the meringue (egg whites, sugar, vanilla, and maple) for a while... It will take 10-15 minutes to get stiff peaks... Then make sure to fold in the flour-brown-sugar mixture, so to not lose all the air you just incorporated! Love love love this recipe, I'll definitely make it again sometime
