Guinness® Corned Beef

Everyone liked this recipe, even the kids, who complained before tasting it because 'beer is icky'. After trying it, they asked to have it every St. Patrick's Day! I have made this twice now, in the crock pot. Last year's wasn't as good, tough and stringy after extra hours in the crock pot - I realized I had bought a tip instead of a flat. Any advice on how to get the tip nice and tender?

Cranberry Nut Granola Bars

I can't even tell you how much we love this recipe. It is now a staple in our house! One tip, line your pan with parchment paper - this is sticky! We have modified this so many ways, that I now use a basic ratio of 3 C rolled oats (I don't seem to ever have quick-cook)+ 1 can sweetened condensed milk + 1 C dried cranberries + 2 C assorted etc. The etc. has included 1/2 c. almonds, 1 c. mini chocolate chips (everyone's favorite!), 1 c. raisins, 1/2 c. cinnamon chips, 1/2 c. flax seeds, 1/2 c. dried coconut, crushed walnuts... mix anything you have on hand that sounds good, as long as the total doesn't exceed 2 cups. When I don't use cinnamon chips I always add a dash of cinnamon to the oats before mixing. Such an easy recipe, and all the kids (and adults, too!)love it! Thank you.

Fudge

I made this with my 6 year old nephew as a treat for the family, and everyone loved it. It was easy to make and tasted good. I heated the milk and butter first in the microwave, and then added the chocolate chips after (I've had bad experiences with seized chocolate!). It worked out fine, and the kids added sprinkles, mini marshmallows and m&m's on top of the fudge before it cooled. One tip, though - I lined the pan with greased foil, that way when the fudge cooled I just lifted the foil out and wrapped it around the fudge to store. Thanks for the recipe.

Sweet, Sticky and Spicy Chicken

My whole family enjoyed it, which is saying something. Following the reviews I read, I rolled the chicken pieces in flour (seasoned with salt and pepper) before cooking in the oil. I left out the hot sauce, since no one but me likes spicy food, and only had about 3 Tbsps of soy sauce, but I added a little water to the pan, along with some vegetables, covered it while the chicken finished cooking, and added the sauce at the end. Not bad.

Roasted Lemon and Rosemary Chicken

I will have to figure out a way to make this with b/s breasts and still keep it moist, since hubby isn't crazy about dark meat. Served with Old Irish Scalloped Potatoes found here on AllRecipes.com.

Old Irish Scalloped Potatoes

Not all of my family likes scalloped potatoes, so I cut this recipe in half, and substituted 2% milk for the cream. In my covered casserole dish, the potatoes cooked through in about 30 minutes. Although they fell apart more than I expected (next time I will slice a little thicker, by hand, rather than using the slicer) they were delicious (although a bit too buttery for my taste). I ended up sprinkling with some shredded jack cheese and adding a bit more milk to make more of a sauce. This will definitely be added to my regular side dish rotation.

Coffee Liqueur I

This was great. I didn't have instant espresso powder, so I just subbed strong coffee for the water in the recipe, and used that to boil into syrup. I also didn't have a vanilla bean, so I added a tablespoon of extract once the syrup had cooled.

Honey Roasted Red Potatoes

I liked the sound of this, and was expecting something great, but it just tasted like potatoes with honey- not really all that appetizing. No one ate them. I may try again, maybe browning the potatoes instead, like home fries, and only adding a bit of honey at the end.

Black Magic Cake

I don't remember where she found it (I think it was on a box of Hershey's cocoa), but this recipe has been a standby in our family for years - since I was a child! Whenever someone asks for chocolate cake, this is what they mean. Moist, rich, & delicious. Frost with a home-made buttercream frosting for a real treat. My dad always requests it 'black forest' style, topped with cherry pie filling and chocolate frosting. AMAZING!

Rolled Dumplings

Pretty easy to make, and very tasty! I used whole wheat flour, and they were delicious. They did puff quite a bit, but I had been warned of this in the reviews, so I rolled mine to about 1/8" and cut them smaller than recommended , and they were fine. I added some shredded, pre-cooked chicken and veggies when they were done cooking, and had a great soup/stew.

Pudding from Scratch

I used this recipe to make a banana pudding for my husband's birthday. It was much easier to make than I thought it would be, although more labor intensive than what I'm used to :) But it was a big hit with the family, even my ultra-picky, name-brand loyal, husband.

Melt-In-Your-Mouth Meat Loaf

When I tried this recipe as written, it was bland and mealy. When I tried to slice it, it just fell apart - which I suppose is true to the title, because it was moist. It was also greasy. I rated it three stars, though, rather than just one, because I took away a great idea - now I add 1/2 c. milk per pound of beef to my regular meatloaf recipe, and then just bake it in the oven as usual. Turns out great, moist and delicious every time.
