Sage Polenta

I made this recipe without the onion/pepper/garlic. Just did the polenta with sage and parmesean, and left it soft to serve with pork tenderloin in a tomato/onion/rosemary sauce over it. Delish!

Bread Pudding with Whiskey Sauce

This was amaaazing!! I brought it to a friend's house for thanksgiving, who is a professional chef, and two of his friends are in the restaurant industry. Everyone was raving! I skipped the peaches and put some rasins instead. For the sauce I used brown sugar instead of white. I also served it with a little mascarpone whipped cream on top. To die for!

Pesto Shrimp Pasta

This is GREAT! I've always shyed away from pestos because there is usually so much oil in them, but this is really pretty light, even with the addition of 2 tbs of pine nuts and 2 tbs of regular whipping cream. When you taste the sauce, it seems really strong and salty, but on the pasta it is just right! Did this with halved grape tomatoes and the shrimp and added some more pine nuts at the end. YUMM!

Spinach Shrimp Fettuccine

This was excellent, but I did make some adjustments, similar to the other reviewers. Quantity wise, I used about two thirds of a pound of pasta, a 9 oz package of fresh spinach, and added a half of a red pepper, chopped into about 1 inch squares. I removed the spinach & garlic from the pan once the spinach was wilted to keep it from overcooking. It only took about 3 - 4 min. I also added some white wine to the shrimp/tomatoes/peppers in the pan to make a bit of a sauce. Finally, I added a dash of salt after putting the pasta and spinach back in with the other ingredients. Will definitely do this again!

Snow on the Mountain Green Beans

I've had a lot of green beans, but these are the BEST!! They went great with our Easter ham, but I will be making them with everything! So refreshing, the lemon is a great balance for the green beans, and the feta is delightful! A++

Balsamic Chicken and Fresh Mozzarella

So good, so easy! I too put the chicken in the oven with the marinade, and put the tomato and basil on towards the end of the cooking. The bf and I LOVED it!
