Reduced Fat Potato Soup

This was a great easy soup to prepare after working a long day. It seemed to lack something so my additions of a 10oz pkg of chopped frozen broccoli, 1/4 cup Parmesan cheese, 1 T. chives, 1/4 tsp garlic powder, and 3/4 cup of the cheddar melted in the soup elevated it to quite delicious. The chives were totally necessary IMO to take it to the next level. The gravy mix is brilliant to create that yummy, creamy texture potato soup must have!

Beth's Spicy Oatmeal Raisin Cookies

Really liked these alot- husband likes them also. I soaked raisins in boiling water + 1/2 tsp. orange extract to cover for a few minutes. I also thought the cloves would overtake the other flavors so I reduced amount to 1/4 tsp and added 1/8 tsp nutmeg. I used the 1/2 c. butter flavored shortening as called for (I always make cookies using 1/2 shortening-- really improves the texture of the cookie and cuts down on saturated fat). Oh- and added about 1/2 cup chopped walnuts. The result was a light, slightly crispy on edges cookie with subtle spice flavors that complimented the oat/raisin combo without overpowering. Thanks for this tasty recipe.

Grilled Mojo Chicken Salad With Asparagus and Oranges

I use all the time and this is my first time rating- don't know why I waited. This really was quite delicious and a light option on a hot evening. I did not add quite as much olive oil to make the dressing but other than that I followed exactly--everyone really enjoyed.

Favorite Old Fashioned Gingerbread

This is a really tasty recipe and adaptable to giving as a "Jar Gift" for friends for Christmas. I am giving this to friends with the dry ingredients layered in a mason jar. I will include a jar of molasses, a jar of lemon curd, and holiday pot holders in a 9 inch square pan with directions for baking. Holiday tissue paper and ribbon will make it "gift ready". I practiced, increasing cinnamon and ginger to 2 tsp. as suggested by others and added 1/2 tsp nutmeg as well. This makes a very hearty gingerbread, not too sweet, that is really yummy with the sweet and tart flavor of lemon curd. Cake was done at 45 minutes so don't wait for 1 hour to check!
