Zucchini-Chocolate Chip Muffins
Followed some other reviewers suggestions and made a few minor changes: added an extra cup of zucchini (squeezed out all excess liquid) and reduced oil to 1/4 butter instead. Subbed brown for white sugar. Used chocolate chunks vs. mini-chips, as that was all I had. Left out the nuts based on personal preference. Wonderful recipe. What really shined was the great taste and texture of these muffins. I'm going to have lots of zucchini this summer so will make these muffins again. I look forward to sharing them with my coworkers.

Special Buttercream Frosting
I'm a frosting fanatic--could skip the cake and just eat the frosting. I made this twice, once using half butter, the second time using 3/4 butter to 1/4 shortening. Both times, it came out terrific. I think it's a matter of personal taste, but something about the shortening definitely gives it that bakery flavor. I used real vanilla, and it didn't negatively impact the color of the frosting while significantly adding to the taste. Finally, the heavy cream gives it a wonderful texture. Thanks for a great recipe!

Candied Sweet Potatoes
Absolutely delicious! I read the reviews prior to Thanksgiving dinner; took the advice of many and cut down the amounts of butter and brown sugar a little bit. It didn't detract from the recipe at all. I used a round casserole dish because my 9x13 pans were occupied. Still came out great, but next time I'll be sure to use the right pan size to have more surface area to cover with marshmallows! We'll definitely make this one again.
