Pretty Chicken Marinade

I loved this! I didn't use liquid smoke, and only marinated the chicken for an hour. I used the amt of marinade listed, but on seven chicken breasts and there was plenty, even for that much chicken. This is a definite keeper.

Thai Cucumber Salad

Delicious!!! The jalapenos are definitely not too hot. We all loved this recipe. I think it will be one of our summer favorites. Thank you! (I used 5 really big cucumbers, 3 jalapenos, extra cilantro, and used the dressing recipe as written. It was just the right amount of dressing. I also didn't salt the cucumbers and added 1 t. kosher salt to the dressing.)

Grandmother's Buttermilk Cornbread

I love this cornbread! I've made it three or four times now, and I eat way too many pieces every time. Last night I made it for a chili cookoff and it got rave reviews. I've used normal and coarse ground cornmeal and both are good and I've used buttermilk and also soured milk with vinegar. Both work great. Thanks! (I am going to try a little less sugar next time...it IS very sweet, but it's very good.)

Pollo Fajitas

We loved this! One of my favorite fajita recipes I've ever made. My changes: I doubled everything except the chicken and added 1/2 of cumin. I also added a red pepper and put the lemon juice in with the rest of the marinade. I didn't cook the chicken according to the recipe, but used cooked chicken and let it soak in the marinade for a few minutes before tossing it with the cooked veggies. So good! Thanks!

Fluffy Pancakes

I just made these pancakes for my family and every one of them (even my husband, who is not a big pancake fan) raved. I've been making pancakes for almost 20 years, and I'm changing my main recipe to this one. Wonderful.

Hasty Chocolate Pudding

My son and I just made this pudding and everyone loved it. We doubled it for our group of 7, and added a beaten egg, tempered, after it had cooked fully, then cooked it for another minute or two. Super easy, super fast and it tastes great.

Black Bean and Salsa Soup

I can't believe I'm rating this 5 stars, but it was really good! It's SO simple, and it honestly looks terrible, but it tastes great. I added another 1/2 t. of cumin and a dash of garlic salt.

Artichoke Spinach Lasagna

We LOVED this lasagna and so did our guests. I made a few changes: I used no-cook noodles, did not use the rosemary or the vegetable broth, but ended up having to use an extra 1/2 can of spaghetti sauce, so I'll try the broth the next time I make this if I decide again to not cook the noodles ahead. I added a package of fresh sliced mushrooms (sauteed them with the other vegetables) and I used regular feta on the top, but also added some mozzarella. So so so so good!

French Toast Casserole

This is one of our traditional breakfasts for guests. I triple the recipe and make one 9x13 and one smaller casserole dish. The 9x13 takes about 2/3 of the mixture and the casserole the rest. I bake the casserole according to the directions and I add a pecan topping (1 stick butter, 1 c. brown sugar, 2 T corn syrup, 1 c. pecans, a little salt, cinnamon and nutmeg) before baking to the 9x13. So divine. Everyone loves both versions. Made it today for Christmas brunch with fresh fruit, sausage and wassail.

Light Oat Bread

I adore this bread. I have made it countless times since finding it last Christmas. I made it as Christmas gifts and people raved. I triple the recipe, make it in my mixer, let it rise, shape it, let it rise again, and bake at 350. It is fantastic. Great flavor and great texture.
