Baked Fish with Shrimp

This recipe was easy and delicious! I used tilapia seasoned with Slap Ya Mama creole seasoning. I added sweet basil, garlic powder and oregano to my sauce. I also seasoned my shrimp Slap Ya Mama creole seasoning. Then I added the shrimp on top of the uncooked filets and poured the sauce over it. Finally, I topped it with Italian blend shredded cheese. Enjoy!

Buttermilk Pound Cake

Love this recipe. I've this pound cake twice and both times it was a hit! The only changes I made was I omitted the baking soda and placed the cake pan into a cool oven. A cool oven is a must when baking cakes. Other than that, you can't go wrong with this cake. Enjoy!

Fluffy French Toast

I made this according to the recipe with the only changes being that I eyeballed the amount of cinnamon I put in it. I also added a little nutmeg. Best french toast recipe I've made so far.

Mississippi Tea Cakes

This recipe is a keeper! The only thing I did differently was that I used Swan's cake flour instead of all purpose flour. The light, airy texture of the tea cakes were divine!!

Broccoli Cheese Cornbread

I used Jiffy cornbread mix instead of cornmeal and omitted the butter. I added in low-fat organic cottage cheese, chopped onion, broccoli and shredded cheddar cheese. Cooked as directed and it came out delicious! This will be a staple in my home.

Cream Cheese Pound Cake III

This was my first time making a pound cake and it was delicious. I used cake flour instead of all-purpose flour. I added a tsp of lemon extract in addition to 2 tsps. of vanilla extract. I did not preheat the oven and I baked it at 300 degrees for 90 minutes. The cake turned out beautifully. It is a heavy cake so I served it warm with Redi-whip and fresh strawberries.

The Best Banana Bread

I followed the recipe to a tee. The only modification I made was that I used four medium-sized bananas instead of measuring 1 1/2 cups. This recipe is easy and simply delicious. Have baked this bread three times already. Thanks Libby!

Slow Cooker Salisbury Steak

Instead of using the slow cooker, I cooked the salisbury steak in a skillet. I followed the directions in the recipe. The only adjustments I made was by adding one can of cream of mushroom soup with roasted garlic to the recipe. I browned the patties first, added the soup and au jus mixture and let it simmer for 40 minutes. Delicious!!!!

Cabbage Jambalaya

A great recipe that is easy to make. I reduced the suggested amount of water and added a can of tomato sauce that was seasoned with basil, garlic and oregano. Add a splash of Louisiana hot sauce and you will have yourself a great meal. Will definitely make this again!!!
