Deep Dark Chocolate Cake

This cake is amazing. It is so chocolatey and moist. I put chocolate mousse in between the layers and used chocolate buttercream frosting. I'll be making it many more times!

Chocolate Covered Cherry Cookies II

These are very good. I followed the advice of another reviewer and added an extra egg to make them more creamy. I also put some frosting in the hole before putting the cherry in, then drizzled more on top after they cooled. They look great on a cookie tray!

Downeast Maine Pumpkin Bread

This bread was wonderful. I added some mini chocolate chips and, as suggested in other reviews, poked holes in the hot loaves and poured on a cinnamon, sugar and butter mixture. It also freezes very well.

Vegetarian Stuffed Red Bell Peppers

These are very good. The Granny Smith apples give them nice flavor. I would use 2 cups of water per 1 cup of quinoa though. I didn't use the mint but added a few more spices just to kick it up a bit. Overall, it is a nice vegetarian dish!

Chocolate Trifle

I just made this for a baby shower at work. The bowl was completely empty in about 10 minutes! I used the suggestions of others... (whipping cream, caramel, sliced strawberries, mini chocolate chips and French vanilla cool whip) and it was absolutely perfect. I was able to make three layers instead of two and it filled the bowl right up to the top. The way everyone is talking about it I'm sure I will be making this again and again. Thanks for a great recipe!

Baked Garlic Parmesan Chicken

This recipe has become a staple in my house. I even had to send some back with my daughter when she came home from college for the weekend. I use Olive Oil PAM instead of the olive oil, and add a bit more garlic, but other than that, follow the original recipe. Very easy and very good.

Chicken Quesadillas

These were very good. I used frozen red and green peppers and onions and it worked out great. Just be sure to defrost them and pat them dry first. I bought fully cooked Southwestern style chicken strips and used those instead of cooking the chicken separately. Also added a little bit of chili powder for some extra spice. Everyone loved them!

Hot Artichoke and Spinach Dip II

WOW, this is really good! I added a bit more garlic and omitted the garlic salt, but other than that, followed the recipe exactly as written. Everyone loved it and requested I make it again for Christmas!

Fruit Dip II

I made this for my brother's birthday party and it was wonderful. We dipped strawberries, grapes, pineapple, blueberries and vanilla wafers and everyone loved it. This is a great, simple recipe!

Spinach Mushroom Quiche

This quiche is very good. I used herb/garlic soup mix (1/2 a package) instead of the herb/lemon soup mix and substituted artichoke hearts for the mushrooms. Everyone at our Easter brunch loved it. This is definitely a keeper!

Key Lime Cheesecake I

I made this for my husband's birthday, and he loved it. I used regular lime juice and the lime taste was perfect. I think I will bake the crust next time to make it crisp, and add an extra cream cheese, as suggested in other reviews, to make the filling a bit creamier. All in all, a very good recipe.

Pumpkin Cheesecake Pie

I made this for my family and it was a hit. I used a ready made graham cracker crust. The next time I will add some extra cream cheese for more of a cheesecake flavor. All in all, a very good recipe.

To Die For Blueberry Muffins

These muffins were great. I did as some other reviewers suggested and added 2 teaspoons of vanilla. I also doubled the blueberries and coated them in flour before folding into the batter. I didn't have any cinnamon so I left it out of the topping mixture, but the flavor was still perfect. Everyone loved them and are already requesting that I make more.

Buster Bar Ice Cream Dessert

I made this for Thanksgiving, and it was a hit! I made it in a round springform pan and used chocolate ice cream. My daughter is allergic to nuts, so I used a mixture of cookie bits, mini chocolate chips and chocolate sprinkles instead. I layered the ice cream, caramel and chocolate mixture over the crust. Everyone said it was better than Dairy Queen!
