Chocolate Banana Bread Pudding

This was fantastic. I did cut the sugar quantity down to 2/3 a cup but it was still so great. I didn't cook it in a water bath, I just baked it for the hour and covered with foil half way through to prevent burning.

Chicken and Corn Chili

My husband went back for thirds!!! I did follow the advice of some of the reviewers and used this as a 'base' recipe and added a can of chiles, diced tomatoes and black beans. When it was done I thought it was a little too thick so I added a little chicken broth and let it sit for another 1/2 hour on low to heat up evenly.

Mom's Zucchini Bread

This was great. I hate leaving a review knowing I made changes to the actual recipe listed, but, this is a great base recipe and if you make it straight, it will be fabulous too. I used half the oil that it called for, and did half applesauce. I also cut the sugar significantly. It calls for 2 1/4 cups. I did 1 1/4 cups. Plus I forgot the vanilla, unintentionally, so it's probably not as sweet as it should have been, but it came out really, really well. I had planned on giving away the second loaf, but then we ate 3/4 of the first one right away, so, I kept it. :)

Banana Oat Muffins

These were good. I didn't think they were the best banana based muffins I've had, but my two year old loved them and she was the one I was cooking for, so in that sense they were a big hit. Overall I thought they were a little bland. Next time I will probably substitute applesauce for the oil and see if that adds some flavor.

Hearty Breakfast Muffins

I really enjoyed these. I made a few changes based on personal preference. I don't care for coconut and used raisins instead of cherries, but kept the recipe the same otherwise. I'm excited to try them again and start trying some other combinations.

Pumpkin Bread Puddin'

So, so good! I wasn't sure about the chocolate on top and so I skipped that and sprinkled raisins on top before baking. That didn't go so well, they kind of charred, but I just picked them off and we ate it without them. It was fantastic. It's perfectly sized to take as a dessert to a small dinner party, 4 or 6 people tops. Anything more than that and you'll have to double it. I baked it in an 8x8 dish for 45 minutes and it came out perfect. Next time I may mix the raisins in, or I may try it with the chocolate and see how that goes too. Overall, very easy, and very good!

Rosemary Ranch Chicken Kabobs

Wow. Just Wow. It's such an odd combo that if it didn't have so many great reviews I would probably not have looked twice. I used 2 tsp dried rosemary and cut back on the salt, and I didn't feel like grilling so I cut the chicken into strips, marinated and then baked it. This was fantastic and my husband raved about it.

Slow Cooker Chicken Stroganoff

This is crazy good. Amazingly easy and basically my husband wanted to bathe in it. Next time I will add some sauteed mushrooms and onions to give it just a little bit more texture. I will also lessen the amount of cream cheese.

These came out really well. They're pretty basic and I actually made them for my 18 month old who's obviously not into heavily spiced dinners, but my husband really liked them too.

Rubbed and Grilled Pork Loin

I baked instead of grilled, but this is a fantastic rub! Will definitely use again! The only change i made was celery salt instead of onion salt, as mentioned by another reviewer, just due to what was on hand. Really a great recipe.

Best Ever Crab Cakes

These were good, and would probably have been better as a large meal size crab cake, which is what the recipe intended. I made smaller appetizer sized cakes and the consensus was, smaller cakes require a bit more pop, where as a larger one needs to be milder.
