Szechwan Shrimp

Easy and smells fantastic while cooking! Substituted 1 tsp. minced fresh ginger for ground and threw that ginger in with the garlic and onions. My daughter wants to try this sauce with chicken now...

Spicy Garlic Lime Chicken

Very tasty. we cut up the chicken into smaller pieces and then pounded thin. We then applied the run and let it sit over night. I added a little tequila and chicken broth for the sauce.

Braised Balsamic Chicken

Excellent! Delicious and hearty! I used regular salt instead of garlic salt, and added chopped garlic cloves along with the onions. The sauce was fabulous over spaghetti squash. Will definitely make this again.

Chicken Breasts Pierre

Easy to prepare. I did not flour the chicken before browning and I substituted red wine for the water. I think it needs some tweaking - the next time I think I will try small pieces of chicken so the flavor could penetrate the chicken more

Black Bean and Chickpea Chili

Pretty good - omitted the turkey and skipped the puree. Also added some minced garlic and chopped celery and simmered on low for about an hour. Served over brown rice - very colorful, low fat and healthy!

Smashed Cauliflower Side Dish

I made this with a fresh head of cauliflower. After the water came to a boil, I threw in a few peeled whole cloves of garlic. I drained the cauliflower in a colander and removed the garlic cloves and smashed in the pot and then returned the cauliflower to the pot. I only used about 2-3 tbsps of butter and sprinkled some garlic powder - tasted just like garlic mashed potatoes!

Great flavor! The fact that the recipe only uses common ingredients makes it even better! The only change I made was reducing the salt a little to a tsp since I am trying to limit my salt consumption.

Roast Leg of Lamb with Rosemary

My first time with lamb and I received many compliments at my Easter dinner! However, I do not feel the marinade permeated the meat very much - I did cut slits in roast and inserted garlic and that I tasted. I baked at 450 for 15 minutes, then turned down to 325. The lamb roasted for hour and a half until thermometer read 120. Wound up resting for 30 minutes while other dishes were cooking and temperature rose to 130. I would make this again, but I skip the overnight marinade next time

Caramelized Brussels Sprouts with Pistachios

I really enjoyed this; the colors of the carmelized sprouts and the red onions are very eye-appealling. My technique differed in these ways: 1) I first cut the sprouts in half. 2) I nuked the sprouts for a few minutes instead of steaming. 3) I cooked just the onions in the butter and when they started to brown, then I threw in the vinegar. Otherwise I followed the recipe.

Yummy! I added some veggies languishing in my vegetable drawer - green and orange pepper, broccoli stems; substitued can of crushed tomatoes for sauce and used 1 cup cabbage/1 cup spinach. This recipe makes a LOT of soup - I put two containers in the freezer.
