Oven Roasted Teriyaki Chicken

This chicken was so fantastic! I followed the recipe exactly except I bake the chicken for 15 minutes longer because my family likes chicken thighs a little drier. The cold leftover chicken is great made into a chicken salad. This will become a monthly dinner staple.

Caribbean Fruity Salsa

I made this upon request for my son's 14th birthday. It was a huge hit with the adults, but those pesky teenagers would not even try it. Well, except for my son and he LOVED it. Perect combo of fruitiness and spicyness. I quadrupled the recipe and ended up not having quite enough mango, but it didn't matter. And I had to use canned pineapple because no fresh was available. I used the exact recipe and at first it tasted a little salty. But by the next day, it was perfect. I think it could have even used more jalapenos. This will be on my go to list from now on.

Raspberry Fudge Brownies

All I can say is that I normally do not like chocolate brownies. These I had to run away from or I would have eaten the entire pan. I had to use blackberry preserves instead, but it did not matter. These were like a little bit of nirvana on a plate. Make sure to undercook the brownies just a bit, as it makes them even more irresistable.

Too Much Chocolate Cake

I needed a quick and easy cake for Thanksgiving and this recipe fit the bill perfectly! I do not have a bundt pan, so baked these in 2 - 9" round cake pans for 30 mins on 350 degrees then dropped the oven down to 325 for 10 more minutes until the middle was just underdone. I did cut the oil back to 3/4 cup as suggested. For a finishing touch, all I did was sprinkle powdered sugar on top and it was moist, delicious and fabulous. Everyone loved it! I used regular sized chocolate chips and they didn't melt all the way, but were perfectly scrumptious bits all throughout the cake. My husband says this is his new favorite and wants it for his birthday from now on.

Jay's Jerk Chicken

This was made for my son's Jamaican themed 14th birthday party. I don't know how traditional this recipe is, but it made some darn fine chicken. We used all the chicken parts instead of just boneless breasts. I think the boneless breasts would be way too mushy and salty if left overnight in the marinade. My personal preference would be for more spice, but the onion flavor was perfect. We had a bunch left over, because we always make too much food at parties. It freezes extremely well and we had it again for dinner a week later. Reheated very easily.

Mock Tea Sangria

Made this, upon request, for a Jamaican themed 14 year old boy's birthday party. It was loved by the adults and my son, but the teenagers wouldn't even try it. After it sat for a day, it was thick. We added lemon-lime soda to each glass as we drank it. A glass of this is like having a meal. It will fill you up. The next day, me and the hubby added some gin and had cocktails.

Homestyle Turkey, the Michigander Way

Oh yeah! This was so good. I kept the recipe almost the same, except that my family and I are on a very low sodium diet. So I used unsalted butter and a no-salt seasoning. The bones just pulled right out of the meat. Delicious! Also, there was so much mouth-watering drippings and broth left over, I froze it for further use. Oh and for the last 45 minutes, I took the foil off so the turkey would brown up.

Baked Stuffed Zucchini

Zucchini is so cheap and plentiful right now we always have it in the house. I was looking for something different and found this recipe. My husband couldn't get enough and was looking for leftovers the next day. Only things I did different was to add bread crumbs to the mixture and stuffed them raw, then baked till done.

Shrimp Lemon Pepper Linguini

I could only give this 4 stars because my son said he thought it was too lemony. I thought it was just right. It's not called Lemon Pepper for nothing. Very tangy and peppery. I did add more liquid ingredients as it seemed to need more sauce. Other than that, this was very satisfying.

Balsamic Baked Tilapia

Sigh! I was only trying to use up some fish and searching for recipes I might like. This was only ok. Husband and kid thought it was alright, but did not want to have it again. I am so not a fish person and I could not barely stand to eat more than 3 bites. If you like fish and blue cheese, go for it!

Scalloped Tomatoes

Delicious!! This recipe is perfect for using up tomatoes that are not so red & ripe. Even better the next day reheated in the oven! I made sourdough bread in my bread machine just to make this recipe. This is now a monthly meal my son asks for.

Stuffed Jalapenos

Okay, these were a bit of work, but SO WORTH IT! I always make the appetizers for Thanksgiving and wanted something different. Everybody loved them from the teenagers to the seniors! Only thing I did different was to use regular coating, not hot. They were plenty spicy! Next time though, I will just mix the sauage and cheese and stuff the jalapenos before rolling in the coating. It took me over an hour to wrap the sausage around the peppers. I'm sure these will be my go-to appetizers from now on.

Rosemary Lemon Grilled Chicken

I used this marinade for chicken wings. I added a bit more olive oil, garlic and lemon juice and marinaded the wings overnight in plastic bags in the fridge. Great flavor!!

Creamy Chorizo and Chicken Soup

I loved this. The leftovers went into the freezer to eat at another time. I just wish I could have found the right chorizo, because mine just turned into a meat slurry. But no matter, was still good.

Garlic-Lime Pork Chops

This recipe made some crummy cut pork chops really tasty. Only things I think they needed was a bit more tartness from the lime and double the amount for pouring over the top. Next time I'll double the marinade ingredients. Would be delicious over rice.
