My favorite things to cook
I like to try new things and learn but I think I like it the most when I just don't feel like going to the store and I choose to see what's around the kitchen. I usually get the best dinners that way :)

Zippy Summer Shrimp
The reviews that were most helpful to me were the ones that called this recipe "too subtle" . I love shrimp for the flavor of the shrimp and some sauces overpower them. This is something I will make again and again. The "zippy" was noticeable to me, hub said he would like his more so he will adjust after. Definitely will make these again. We are both on Weight Watchers so shrimp is a "pig out" food. I bought 2, 2 pound bags of the jumbo shrimp and went by count as opposed to the weight. Didn't double the sauce and it was perfect for 60 shrimp. We left some of the sauce in the pan because of the amount of oil so my count of 20 shrimp (3 of us eating this) for 10 points was probably even a little high. Someone mentioned that these were good grilled. I bet they are - yum! Going to try that next time :)

Vegetarian Kale Soup
4 WW points per cup!! Was looking for something interesting to create and this popped up on the welcome screen. Told the family that this is what's for dinner. 16 yr old was open to the idea, hub is addicted to meat so he was a harder sell. So quick and easy to make, hardly dirtied anything. Cubed the potatoes really small so some broke up to give it a creamy texture. I used 2 full cans of the cannellini beans so that was about 40 oz and doubled the kale - next time MORE kale :) Ended up with an 18 cup pot (for all you WW out there). Of course this will vary but it won't be much less. Son had 2 bowls, hub said "tasty" and didn't miss the meat :) Will definitely make this again and again an again :)

I'll be making this again! Doubled the recipe but really didn't need to double the noodles - just could have used a standard 16 oz bag. Also cooked and drained the meat before I added the onions,celery, etc because I didn't want to drain the veggie liquid too and used the liquid from the tomatoes and I was happy with the moistness of it. This will be a perfect meal to make in the morning and have on those nights when my afternoon is full.
