Avocado Shrimp Ceviche-Estillo Sarita

I cut the recipe in half and there was plenty of salsa! I used cooked shrimp and cubed up the avocados and put them in (I liked the pop of color they added). *** Do NOT eat with saltines, it's not as good. They'd be much better with fresh Mexican tortilla chips. Otherwise, everything else was the same. Enjoy!

Pineapple Chicken Tenders

Used this for my Luau Birthday party and everyone gobbled them up! The chicken skewers are easy to grill, eat, and clean up!They were delicious, but it needs a little something. Will add ginger and garlic next time. Also, I'll definitely try the other people's recommendation of boiling the marinade (to clear of it any salmonella), adding corn starch to thicken, and use as a dipping sauce!

Classic Egg Salad

This was edible, but I probably won't make this again. The recipe calls for a little too much mayonnaise, so it's a bit wetter than I'd like it to be. Maybe try 3 tablespoons first. If necessary, you can add more later. I also added about 1/2 tsp of scallions and 1/2 tsp of yellow mustard (didn't ahve dijon on hand, but it would probably add a bit of kick to it). I don't like the smell/taste of all the raw onions, so I'd omit that. There are betetr recipes out there I'm sure of.

Hamburger Potato Casserole

It's only OK because it is VERY heavy. I cooked the beef with garlic and half a cup of onions. I also hand cut the potato since I didn't have a mandolin. This recipe doesn't quite explain the layering order very well. I put meat on the bottom, poured soup mix on top, then potatoes (then do it again). I would recommend putting a layer of potatoes on the bottom to help soak up some of the juices? Also, adding a LITTLE bit of cheese into the layers too. For the top layer, add some of the soup mix so the top potatoes don't dry out and get hard (we just tore this top layer off). I probably won't make this again though.

Poppy Seed Pound Cake Muffins

These were delicious right out of the oven! However, if they are not consumed the same day, they do tend to dry up. I personally did not tweak the recipe, but it appears other reviewers have in order to add a bit more moisture. Perhaps adding some lemon juice would add a bit more flavor as well.

Honey Fruit Salad

This was an easy recipe and we loved it! So fresh and a healthy alternative when seeking sweets. I made the mistake of buying the berries from a regular grocery store, so I do recommend going to Costco/Sam's Club if you have a membership... much less expensive that way. Should let it sit a couple of hours for the flavor to soak in before consuming. Will definitely use this again, thanks for sharing!

Grandma's Green Bean Casserole

I followed this recipe with Momma_S's modifications, see Most Helpful Review, for the most part... I did use canned French beans as I was short on time and accidentally forgot the fried French Onions. Made this on Saturday for our 1st Frendsgiving. However, it still turned out really good! I will certainly try it with fresh beans and the fried onion rings next time!

White Chocolate Macadamia Cranberry Dreams

Followed this recipe to a T, people were asking for more! I was short on time, but I will certainly drizzle colored chocolate over the top when baking for a cookie exchange or giving away as gifts! Keeping this one in my book for sure!

Peanut Blossoms II

These cookies were perfect! An instant favorite for my roomie & the BF. I've made them before, but rolling them in sugar makes them a little bit prettier. One thing I did notice was that I didn't need the 1/2 cup for decorating, so perhaps you could use 1/4. I baked mine for only 10 minutes and they came out just right! Thanks for this classic recipe!

Twice-Baked Mashed Potatoes

Who knew that adding green peppers would make a world of difference?! I also put minced roasted garlic to the mix. This recipe was hands down the best mashed potatoes I've ever had, I will never eat it again any other way! The BF and my friends absolutely loved it. Thank you for sharing this!
