Honey Dijon Pork Chops
This turned out really good. I think it greatly depends on the type of mustard you use, though. I'm betting the reason some of the reviews are negative is because they didn't use good mustard. I used about 1/8 cup of Gulden's Spicy Brown Mustard and 1/8 cup of Chipotle Mustard. It turned out slightly spicy and very tasty. The pork chops were very moist too. I'll definitely make this again!

Slow-Cooker Chicken Tortilla Soup
I gave this 2 stars because I had to make significant modifications to make it tasty. It is a good starting point, but AS IS, the recipe is not that great. I think many of the negative reviews are due to the fact that there are many variations in the ingredients (different canned enchilada sauces, chicken broths, sizes of onions, etc.).

Angela's Awesome Enchiladas
These were really good. I had some leftover chicken from the Simple Roast Chicken recipe on this site so I used that and I added one shredded boiled chicken breast- it probably wasn't quite 2lbs of meat, but I kept all of the other ingredient amounts the same and it worked fine. I made a few modifications based on what I had in my pantry- instead of green chilies I used chopped jalapenos. I didn't have the green onions or black olives so I omitted those and I added sliced jalapenos on top. I also added about 1Tbsp of minced garlic to the chicken mixture when I added the garlic powder. My husband and I both loved these. They were quite a bit of trouble to fix, so I'll probably save them for special occasions when I have more time to cook, though.
