Homesteader Cornbread

This cornbread was okay. I usually make the Grandmother's Buttermilk Cornbread from this site, but I didn't have all the ingredients that I needed. I would suggest using that recipe rather than this one.

Harvest Pumpkin Cupcakes

Cupcakes were very moist and delicious. I only baked my cupcakes for 19 minutes and they were perfect. I don't like orange so I just used a cinnamon cream cheese frosting on top.

Cheesy Italian Tortellini

Great, easy meal when you don't feel like putting a lot of effort into dinner. I used a pound of ground sausage and left out the ground beef. I made this on the stovetop and left the sauce simmer for an hour. Turned out great.

Chicken Enchiladas I

Fluffy Potato Casserole

This was wonderful! I am always looking for something new to do with potatoes, and this one is a keeper. I did not change anything with the recipe, although I probably had closer to 3 cups of mashed potatoes. This dish came out perfect! The potatoes were creamy and I loved the crunchy onion on top. I did not have any leftover mashed potatoes so I made them and assembled the whole dish ahead of time. When it was time for dinner, all I had to do was sprinkle on the fried onions and pop it in the oven. Delicious!!

Real Italian Calzones

Wonderful recipe. I never made dough before, and these came out amazing. They looked perfect and tasted just as good as ordering from a pizza shop. I, like many reviewers, tweaked the filling to my preference. I will be making these over and over again!!

Sweet and Sour Meatballs I

This recipie is so eay and wonderful. The first time I ever had this, was at a friends house and they used frozen meatballs. I loved the sauce, hated the meatballs. I just do not like the frozen taste. I used this recipe and loved it. The only thing I did differently was to grate the onion into the ground beef

White Cheese Chicken Lasagna

Great recipe, and a wonderful change from traditional lasagna. The only thing I would do differently next time is season the chicken. I only cooked it with a little seasoning and it just tasted bland within the lasagna. No one else noticed, but I am critical of the things that I make. However, the recipe was still great and 5 stars the way it is.

Pineapple Chicken Tenders

Delicious! Very easy marinade, and the chicken had wonderful flavor. I was happy that it did not have an overwhelming pineapple taste, the flavors of the marinade blended great together. I didn't feel like bothering with skewers so I just used chicken breasts that I cut in half, to make them thinner. I marinated these for 8 hours, but before marinating, I reserved some of the pineapple mixture to serve with the chicken. You don't really need this since the chicken is so moist and delicious on its own, but I just really enjoy having the extra sauce to dip everything in. Fantastic and easy and I will definately be making this over and over again.

Key West Chicken

Amazing taste! I used the advice from other reviewers and cut back on the soy sauce since it can overpower a dish very easily. I used 3 tablespoons of soy, 3 tablespoons of honey, 2 tablespoons of oil,and the juice of one lime. I marinated this in the refrigerator for 8 hours. The chicken was delicious and the grill flavor was perfect for this marinade. I will definately be making the recipe again!

Delicious Black Bean Burritos

These were delicious. I used 2 cans of pinto beans and sour cream instead of the cream cheese because I forgot it at the store. My husband and I both loved these. I also used a whole jalapeno, and we both agreed that the amount of jalapeno was perfect. I do recommend using the jalapeno, I made one without the jalapeno for my 2 year old, and it was bland without it.

Braised Balsamic Chicken

My husband does not like balsamic vinegar so I took the advice of another reviewer who said not to write this recipe off if you do not like balsamic vinegar. I used 2 tablespoons of balsamic and then added chicken broth to equal 1/2 a cup. It was delicious and my husband and I both loved it. Even my picky 2 year old ate it. We were able to taste the balsalmic vinegar in the dish, but it was not overpowering for my husband. We will definatley be making this again.

Roast Pork with Maple and Mustard Glaze

This glaze is wonderful. I basted the pork every 15 minutes. I reserved a little of the glaze and heated it up in a saucepan to drizzle over the pork. My husband could not get enough of it. He was dipping all of his side dishes in it. This is a very easy and delicious recipe. After reading many reviews about the time it took to cook the pork loin, I decided to cook mine for an hour and 45 minutes. I left it rest the full 10 mintues and it came out perfectly cooked, very tender, and delicious.
