Rich and Creamy Tomato Basil Soup

Like other reviewers suggested, I cut down on the butter and cream and upped the tomato and basil and added a little garlic. Even with less fat, it's still rich and creamy and sooo delicious. Fantastic! Also, instead of tomato juice I used tomato paste mixed with water. Will make this again!

Amazingly Good Eggnog

OH MY GOD!!! It was so good. I left out the alcohol and let each person add it to their drink individually if they wanted it. I didn't have any problem with my milk curdling. I didn't bother tempering the eggs, they did cook up a little so maybe a I should have. I ran it all through the blender, so it was fine. Sooo rich though. Could only do a few sips at a time, or had to cut with milk. Will make for many more holidays to come.

Key Lime Pie VII

Really good and super easy. A little on the sweet side though. I used regular limes and it only took about 4 to get enough zest and juice. I had a little too much filling in the end (not that I minded eating it plain later). Although it was delicious the first time, next time I make this, I will decrease the amount of sweetened condensed milk and up the sour cream and lime (and make 2 pies, because they go way too fast)

Veggie Lasagna Florentine

Love the idea of making your own sauce, you can make it as healthy as you want. Used all fresh ingredients rather than canned/frozen and whole wheat pasta noodles. Omitted any salt or sugar. Also used 2 bulbs of garlic rather than 2 tsp. Delicious. Added some ground turkey to my sauce, which I know defeats the veggie purpose.

California Grilled Veggie Sandwich

Delicious! I used pre-sliced focaccia bread that was on sale, and made narrow hot open face sandwich things. My boyfriend, an ardent meat eater, said they were decent, which, translating from male, means excellent. I broiled instead of baked. I attempted to keep the veggies all nicely lined up on a tin-foiled pan, but ended up mixing it all together. Turned out fine. I usually despise red bell pepper, but it was great in this. As someone else mentioned, the bread makes this sandwich, so choose wisely.

Shrimp Lemon Pepper Linguini

Delicious. We made this for valentine's day dinner. I'm a fan of alfredo sauce and thought I would miss the thick creaminess of that, since this recipe's sauce is a lot thinner. Was not at all disappointed, excellent flavor, simple and delicious. The wine cooks off and just leaves the perfect trace flavors.
