Oatmeal Peanut Butter Cookies

These are so perfect I wish I had more stars! Beautifully crisp but somehow still chewy they are amazing! I've started playing with other stuff: chopped peanuts (or crunch peanut butter) add texture and so do mini chocolate chips (full size don't have time to melt in like the mini's do!) So so very good!

Chocolate Mocha Cake I

So dense and moist and so so perfect. I made the mocha frosting, with a tablespoon of Kahlua added and it was so good I nearly licked the plate! Add in the fact that it's easy to make...definitely a keeper!

Coffee Icing

Very, very nice! Even using very strong coffee (it had legs...ugh) it wasn't quite strong enough for me in the mocha department so I added a tablespoon of Kahlua. I had to force myself not to lick the daubs of frosting off the counter. Man, this is soooo good!

Banana Crumb Muffins

Really nice! Fluffy, light and the perfect mix of sweet for the topping. I did add a 1/4 tsp cardamom just to give them a little more kick. I also did this as a bread, which worked...but it didn't cook as evenly as bread as I would have liked. Very nice!

Raspberry Balsamic Dressing

This was really good. I did add a touch extra raspberry (home made...mmm) and a pinch of powdered mustard. Also, when I first tried it I tried to half the recipe...doesn't work. Make the whole batch, it's good and should keep well. The only other thing I did was put everything but the oil in, whisked it then slowly added the oil so it would emulsify and not separate. It came out perfect! And the longer it sits, the better the flavor.

Baked Honey Nut Chicken

This was amazing! I too cooked it a little more slowly to make sure the chicken didn't get dry and it didn't. It was perfect. I did have to use half almonds and half pecans as I didn't have enough of either on hand but it was great. Also, I cut it up and put in on a salad with dried cranberries...I don't remember the last time I ate salad without dressing!!

Stabilized Whipped Cream Icing

This worked beautifully! Two small things: Did a double batch so used 1/2 white sugar and 1/2 confectioners. Don't know that it really made any difference. Also, dissolved the gelatin on the stove, I felt like I had more control over it than in the micro. It spread and handled perfectly though even in my chilly PA kitchen I did feel like i had to work fast. After frosting, I set it in the fridge and it set up and STAYED set up! I have an angel food/raspberry cake I make whipping cream for frosting and will be using this in the future. One note....flavoring (vanilla) can be switched up to suit the need of the cake or omitted all together. Great recipe! Thanks!

Chocolate Covered Cherry Cookies II

If there were more than 5 stars, this would get them all! So easy, they look harder than they are, and so good and so impressive! I cover my cherries totally with the frosting, keeps the cherry from drying out that way. They're always a hit.

Italian Bread Bowls

These made me look brilliant...even though I goofed and only put 2 packages of yeast, they came up beautifully! I added a pinch of sugar to the yeast, so maybe that helped. The bottoms got a little bit too hard, I'd cut back a few minutes of cook time next time. Also, I didn't use these as big bread bowls. I cut it into 12 pieces and made individual dinner rolls to go with my thinner soup. Perfect and so EASY!

Cranberry Pistachio Biscotti

Easy, light, crisp, delicious! I left out the salt as my pistachios were salted and I was really glad I did. I also used 1/8 c olive and 1/8c veggie oil because I was concerned about it tasting ' olive oily'. Came out fantastic and one of the easiest things EVER!

Orange Cranberry Biscotti

Wahooo!!! These were amazing! We added a pinch of cardamom to the batter and it really made the orange flavor zing! We did one batch and had to do another to keep up with demand. So simple and easy to make! We used OJ instead of liqueur and did just a touch more cranberries and almonds. Would also be good with a dark chocolate drizzle. Awesome!

Squash-Apple Bake

very good! I didn't do the layering because i was concerned the apples would get mushy before the squash got done (we used a winter buttercup squash). It came out great and people who don't normally like squash in my family loved it! A variation was I made candied walnuts (brown & white sugar, egg wash, mix, toast...mmmm) and mixed in with the apples and squash. It was great, but it was great without it too.

Banana Oatmeal Cookies III

Made it almost as stated except was short on shortening so I used 1/4 c applesauce. Also added a touch of cardamon and dried cranberries. I did, however, forget to add the oatmeal! The second half I got some in there and honestly? Either way was good! Soft and chewy, cake-like and great flavor!

Chewy Peanut Butter Brownies

Nice flavor. Very peanut-buttery. However, also a little cakier than I'd like. I dumped come choc chips (dark chocolate) in and then made Satiny Chocolate Glaze from this site for the top. I think they're pretty good, my husband loves them and since he's the /real/ peanut butter fan, I'm adding a star over what I would normally have.

Double Fudge Kahlua Brownies

Tasty, but not in the least fudgie. I think in the future I'll take the icing and use it on a tired and true brownie recipe. These were very cakey, almost as if something was missing (some sort of fat or oil or something?) They turned out a little like a Kahlua cake, more than brownies.

German Chocolate Cake Frosting

While the flavor is really good, the color seems somewhat off and it so didn't set!! I must have added at least a 1/3 cup of corn starch to get it to set and then there seemed to be a predominate eggy flavor. Once it cooled, it mostly set up and the eggy flavor was lost in the cake but it wasn't what I'd hoped for.

Chocolate Coffee Molasses Cookies

As others said, really time consuming for the mediocre outcome. The cookies were blandish and the frosting too sweet for the cookies. We changed it up a bit and that helped: added Kahlua (about a teaspoon) to the frosting. I would probably double the amount of spices in the cookies if I was compelled to try this one again.
