So I have got my cooking pants back on, finally! I asked the big man in my life what would you like tonight for supper and of course he said, porkchops. AGAIN! I asked him if he liked fried apples......yeah loved when my mama used to make them, alright we're going to have them with supper tonight, I know he has a sweet tooth like nobody's business. I know he hates spinach and loves mushrooms, and cheese. I had portebellos, cheddar, baby spinach, and bacon in the fridge.
As the boneless porkloin chops thawed I pondered what to do.

I finally figured it out, one of his kids called, he had to go run an errand, I had a time frame where he wouldn't be in the kitchen. He likes to peek at me to make sure I'm not sneaking anything wierd into anything.......

Into the kitchen I went, I hurried up and got the porkloin out and pounded them(veal style) then I put spinach and sliced portebellas into the middle with some salt and pepper, and made a porkloin burrito out of it and wrapped it in bacon. It was just the two of us tonight so I made two of those, he came home about now, the spinach and mushrooms back safely in the fridge, all he saw were these wierd bacon roll looking things but it's pork so it must be okay, then I start pounding another chop, he asked what are you puttiing into that. My answer, cheddar cheese. Made 2 of these. Let them set for a min while I peeled and cored 4 apples. put them in a bowl with lemon juice. Seared the rollups as he called them in hot skillet put them in a hot oven to finish.
Then I made the apples, all nice and traditional. When the "rollups" were done he ate everything on his plate and wanted more... he ate spinach!

I love it! My husband hated cottage cheese, even though during our dating years my mother put it in lasagna, and he loved her lasagna! My daddy talked about how he hated Pet Milk and wouldn't be caught dead having it. My mother always hid the empty cans deep in the garbage when she made his favorite homemade ice cream! What they don't know won't hurt them!

About Me
I love to cook and my first cooking memory is of watching the hamburgers for my mother while she changed my little brother when I was 5.
My favorite things to cook
I love to bake and cook everything! I would rather make my puddings from scratch than ever open a box!
My favorite family cooking traditions
Stirring the chocolate gravy and making drop biscuits on special mornings when the whole family was favorite breakfast when I was a child biscuits and chocolate gravy!my mama made the best chocolate gravy!
My cooking triumphs
My first Christmas without my mother supervising, I was the lead cook and everything turned out great! From cocktails (chocolate martinis) to the turkey everything was perfect!
My cooking tragedies
The first time I tried to make sushi, my sushi rice was still crunchy.... I had to start all over again and thankfully the second round was better than the first, and we had sushi for weeks until I mastered the sushi roll!
