Angela's Awesome Enchiladas
I have made this several times and everyone always loves it! It is time consuming though, but worth it in the end. Some have said that you should use corn tortillas, however my family does not like the corn tortillas, and prefer the flour...so this recipe is just right the way it is! I say use whatever type tortilla you like, but definitely give this recipe a try!

Italian Spaghetti Sauce with Meatballs
I have been making this recipe for over a year now. I used to love my moms spaghetti and meatballs, but she died with her recipe :( I searched here for a recipe I could try and found this one. I stick to the original recipe pretty much, except lately I have been using diced tomatoes just because it's easier than the whole. I also add a pinch of baking soda to cut the acid some (a trick I learned on the internet) and I add some brown sugar to sweeten it up some. I just love the flavor of this sauce! The meatballs always come out perfect, and since they are cooked in the sauce....so easy. I recommend this recipe wholeheartedly!

Tomato Pork Loin Chops
I made this tonight and followed the recipe exactly. I thought it was pretty good, had a little kick to it. Next time I may use less fennel. I could tell my husband was trying to figure out what "that" smell/taste was... he also thought it was a little spicy, so I would probably cut down the spice. But personally I liked it.... thought it was something different to do with pork chops. I served it with butter/herb noodles.
