About this Cook
I am a mom of a beautiful girl and boy and wife to the man of my dreams. God is my number one, my all in all, my savior, Father, and King. Jesus Christ is my brother, friend, heavenly husband, and Lord. I love to sing praises to Him while I cook, clean, and care for the kiddos. I am a very blessed stay-at-home-mom. I soak up every moment with my kids and time doesn't fly when I remember to cherish every second with my family. I love Facebook, Youtube, Beckah Shae, Google, and most of all my many bible reading resources. I love to blog when I can and definitely pray that God will make me a rockstar to sing His praises someday.
My favorite things to cook
Steamed veggies, brown rice, enchiladas, shepherd's pie, burritos, nachos, fish, GLUTEN-FREE, dairy-free, soy-free, but not delicious-free! Stir Fry, pasta, slow cooker chicken, potatoes...

Huevos Rancheros, chicken and veggies, tacos, chicken soup
My cooking triumphs
I made my first Gluten-free recipe! It was beautiful blueberry pancakes. They tasted amazingly like wheat pancakes. I am filled with hope for the many other gluten-free recipes I now will be more confident to try. :)
My cooking tragedies
Brown rice is trying to be a problem for me to get just right. I am thinking I might need a rice-cooker for my birthday. :)

Delicious Gluten-Free Pancakes
This is my first review on this site and also my first ever gluten-free recipe. I am simply AMAZED at how good these pancakes are! I was worried that gluten-free would mean yum-free, but I have been filled with hope and excitement because of these pancakes. The only modifications I made were: instead of buttermilk powder which I didn't have, I used 1 and 1/3 cup fat free lactose free milk and NO water. I also added a tbs of brown sugar to replace the sugar substitute. I ran frozen blueberries under hot water and added them to the pancakes while they cooked. My husband never knew they were gluten free! My kids gobbled them up and I was so happy after every bite. I know you probably think I am silly, but this really has given me a new hope for living a better life. Wheat has been causing me problems since my first pregnancy and now I think I have the confidence to try lots of other gluten-free recipes! Thanks a bunch!
