Slow Cooker German-Style Pork Roast with Sauerkraut and Potatoes

I have made this many times using a frozen pork loin, do not drain the kraut and add about 3 Tbsp brown sugar. I sometimes add a chopped green apple. Sliced onions are a nice addition also. Perfection!

Greek Pasta Salad I

This is my absolute favorite pasta salad and my family requests it often! I am not a fan of mushrooms, so I add artichoke hearts instead. As others have suggested, I cut the oil in half and double the vinegar (I use balsamic). I also use fresh garlic! Awesome!

Pesto

This is my new favorite pesto recipe! As others have suggested, I add about 1/2 t. salt. Instead of parsley for color, I just add about 1 T fresh lime juice. For a creamier sauce, add 1/2 cup heavy cream and whisk over low heat. Toss with pasta and veggies or chicken. Yum!

Thai Red Chicken Curry

YUM! This is a very good, quick and easy Thai recipe! I give it four stars because it does require some adjustments. After reading several reviews, I added lime juice, fresh garlic (4 cloves), 1 Tbsp brown sugar, some coriander, snow peas, salt and pepper (at least 1/2 tsp of salt...I prefer even more) and a heaping spoonful of peanut butter (special thanks to the reviewer who suggested that addition)! Perfection!

Slow Cooker Chicken and Dumplings

I finally found the perfect Chicken and Dumpling recipe! With these additions it is truly one of our family's very favorites: cumin, poutry seasoning, garlic, parsley, salt/pepper, carrots, celery and whatever veggie you want (sometimes I throw in corn or potatoes). I only use one package of biscuits, roll very thin and then use a pizza cutter to slice into strips. The thinner the dough, the quicker the dumplings will cook. Enjoy!

Slow-Cooker Pepper Steak

One of my favorite slow cooker recipes! It is perfect over white rice. I skip the browning of the meat and just dump it in the crock pot. Double the sauce and add more cornstarch for a nice, thick gravy. Try using teriyaki sauce instead of soy sauce. YUM!

Enchiladas Suizas

To die for! I love this dish and so does everyone I make it for! I slow cook the chicken in red enchilada sauce, use canned chilis to save time and spread sour cream over the top instead of heavy cream. I also drizzle some of the red enchilada sauce over the top. Try this recipe...it's worth the effort!

Slow Cooker Chicken Stroganoff

This was delicious! Everyone in my family loved it and that makes it a winner in my book! The only reason I did not give it 5 stars is because I tweaked it a bit: used 1/4 cup bottled italian dressing instead of the margerine/dressing mix, added 1/2 t garlic powder (we love garlic at my house) & a splash of white wine, cooked on high for 3 hours, then added the soup, 4 oz. cream cheese, 1/2 cup sour cream, 3/4 cup chicken broth, dash of black pepper and paprika, cooked on low for another 45 minutes and served it over rice (though I think egg noodles would have been even better). The chicken was "melt in your mouth" yummy!
