Easy Paella

Paella is one of my husband's favorite dishes at restaurants, I made this for him as a surprise but worried it wouldn't be good enough. He loved it! It is time consuming but not difficult. It looks impressive and would be great for a dinner party. I was hesitant to buy saffron threads for $17 but you use so little and I could make this recipe at least 8 more times with the same bottle. I had trouble getting the rice to cook. I slowly kept adding more broth until it absorbed and got softer. This recipe is a keeper!

Quick Gnocchi

I made this in a pinch because I couldn't find the whole wheat store-bought gnocchi I always get. I will never buy it again! I made as is, doing 3/4 cup white flour and 3/4 cup of whole wheat flour. Tasted exactly the same as the store-bought brand but waaaaaaaaay cheaper!

Awesome Crab Soup

Yum! I used an extra cup of the chicken broth instead of white wine, fat free half and half, and two cans of crabmeat. Otherwise, I followed as-is. I froze it to see how it would freeze - two weeks later, it's still great! I plan to make this for a soup swap party.

Slow-Cooker Chicken Tortilla Soup

Let me start by saying that I'm giving this two stars because I made it exactly as listed and there was no "wow factor." I'm quite disappointed because it has over 2000 reviews and almost 5 stars, I have never had that problem with allrecipes.com. Recipes that are rated high by a lot of users have ALWAYS turned out nothing less than amazing. This is the first time I have ever given negative feedback.

Slow Cooker Taco Soup

I make this a lot for easy work lunches. I freeze it in single serving containers so I can just grab and go. It freezes very well. Sometimes I substitute the beef for ground turkey, and both are great. I also use 1 cup of chicken stock instead of tomato juice because I never have tomato juice on hand. I drain my corn and black beans and add chicken stock accordingly. Whenever I heat it up in the microwave at work, my co-workers always comment on how good it smells.

Chicken Meatballs and Spaghetti

I cheated and used 2 jars of sauce to save time after work. These meatballs are so simple, but so delicious. I have made them three times now and each time my husband and I talk about how good they are during the entire meal. I can't get enough of them :)

BBQ Chicken Sandwiches

As I was throwing all the ingredients into the bowl, I was really skeptical, but once everything was in there the sauce smelled amazing! I cut back on the garlic because I thought it seemed like too much, but next time I will use all 5 TBSP. I only used 1/2 cup of mustard because my husband can only eat it if it's well disguised. I took the advice of another reviewer and used 4 large chicken breasts and threw everything in the slow cooker. I kept a good eye on it and began shredding some of it here and there as it cooked.

Breakfast Sausage

Great seasoning and so easy! I substituted 2 lbs. of ground chicken for the pork. I thought I could cut back on the salt, so I only used 1 1/2 teaspoons, but next time I will use the full 2 tsps. I also used 1/2 tsp of red pepper flakes, next time I will use a full tsp because I like spicy sausage.

Asian Orange Chicken

My husband's favorite, I make it every year on his birthday. I also made it for a dinner party, however, it was a lot of work for a dinner party. One time I added extra orange, and it was just too much. I follow the recipe verbatim.

Eggplant Rollatini

This is one of our favorite recipes. It's great for a dinner party, you can make it ahead and throw it in the oven before guests arrive. It's even better than my Italian father-in-law's rollatini :)

Granny Kat's Pumpkin Roll

The only thing I did differently was bake on parchment paper and put parchment paper over the top before rolled it up in the towel. It was my first time making it and it was very easy! My cake did split a tiny bit, but I think its because I spread the batter unevenly.

Clam Sauce with Linguine

Very easy! I omitted the mushrooms, my husbands loathes them, and took a reviewer's suggestion of adding sour cream and cornstarch to thicken it up. Since I did not use mushrooms, I only used 3 TBSP of butter to saute the garlic. I did not use ground white pepper, simply because I did not have any.
