Fruit 'n' Honey Granola

Reviewed: Dec. 30, 2011
Ooh! this was good. I didn't have the flax seed and wheat germ (will buy next time) but I added dried mango, pineapple, apricots, raisins, and chopped almonds. I toasted the almonds and oats for 15 minutes then added the dried fruits and cooked for another 15 minutes. Also, it is imperative to let the granola cool COMPLETELY before handling. Otherwise it will be too crumbly like cereal. If you leave it to cool, it will harden and then you can break it up to suit your own needs. Overall, great taste and highly addictive!!

Cordon Bleu Chicken Rolls

Reviewed: Dec. 28, 2011
I followed the recipe to a T and it was very good. I used as many toothpicks as needed to hold the breasts together and keep the cheese from overly oozing out during baking. Don't be afraid to use alot. When the breasts are cooked simply remove all of them before serving. One important note: Do season the raw chicken breasts with some extra salt and black pepper because overall the chicken itself tasted under-seasoned. The only thing carrying the flavor was the cheese and the ham. Other than that, the recipe is a good one and a keeper.

Sour Cream and Chive Mashed Potatoes

Reviewed: Dec. 24, 2011
It was just ok... nothing to get excited about. Honestly, it was rather bland ... the sour cream didn't add any additional flavour

Gingerbread Men

Reviewed: Dec. 19, 2011
This is a really great tasting cookie. I didn't change anything with the recipe and it came out fine. My dough wasn't dry as others reported . HOWEVER, I must say that if you are looking for a traditional tasting gingerbread cookie then this is not the recipe for you. This one is really meant for kids in my opinion because you simply can't taste the spices in the cookie. Younger children will appreciate this. So four stars for taste but one star deducted because it doesn't taste like gingerbread so another name should be allocated

General Tsao's Chicken II

Reviewed: Nov. 8, 2011
Yes this was really good. I just wished that the chicken was a tad crispier. I still haven't figured out how the restaurants achieve this. Other than that this is definitely a keeper!

Moo Goo Gai Pan

Reviewed: Aug. 30, 2011
This was a really simple easy -to-make recipe. I will never buy this at the restaurant again! I doubled the sauce as others suggested and the result was perfect. I actually used enoki mushrooms instead of the straw mushrooms and it tasted just as fabulous . Definitely a keeper!

Blueberry Crumb Bars

Reviewed: Aug. 22, 2011
This is a good recipe that is tasty and VERY easy to make.I've made this twice now and both times the bars came out perfect. As others have stated, I substituted butter for the shortening, used 1/2 C white sugar, 1/2 C brown sugar, added 1tsp of vanilla, and 1tsp of cinnamon to the crumble. The result is a very flavourful crust Oh and this time I used 2 C blue berries and 3 C frozen sliced strawberries and the result is just as perfect, so don't be afraid to experiment a little. If you do add the strawberries just add 1/4 C more sugar to the fruits to balance out the extra tartness of the strawberries . Overall this is definitely a keeper!

Cream Cheese Chicken

Reviewed: Mar. 26, 2011
I hate to give a bad review! Sorry but I just didn't like the combination of flavors in this one. The sweetish taste combined with the flavour of the nuts tasted quite odd.The texture of the dish didn't help either as it was just too mushy. My hubby who is known to have a "cast-iron stomach" didn't like this one at all and he eats almost everything without complaint. I will have to pass on this one.

Spinach Lasagna III

Reviewed: Jan. 30, 2011
Very very good! It held up extremely well. I have made other spinach lasagna before but the texture has never been good enough for me. This time the texture was right one. I believe the key was to blend the ingredients with the electric beater as the recipe suggested. This lasagna was rich creamy and best of all tasty!

Blueberry-Orange Muffins

Reviewed: Jan. 30, 2011
These were really good! I got 24 large muffins out of these. I used the zest of two large tangerines instead of oranges because that is what I had on hand. Next I peeled the remaining skin of the tangerines and placed all of the naked pegs, together with the zest in the blender. I added 1/2 cup of orange juice and blended all of it.This is the mixture I used instead of the regular 1 cup of orange juice the recipe called for. This made the muffins taste more orangey The other modification I made was to use only 1/2 cup of oil and substitute the other half with 1/2 cup of plain yogurt. The result is a tasty moist delicious muffin ! Definitely a keeper!

Orange Yogurt Bread

Reviewed: Jan. 3, 2011
Very tasty. I used lemon zest instead of orange zest and I used 1/4 cup freshly squeezed lemon juice and 1/4 cup freshly squeezed orange juice . The result was a moist and somewhat tangy delicious cake. I didn't add the glaze because I was out of icing sugar. But you know what? It really didn't need it. Anyway, I gave it only four stars because the name is misleading. This is by no means a bread, is a CAKE!!Other than that it gets five stars for taste

Pineapple Upside-Down Cake V

Reviewed: Jan. 2, 2011
Very interesting spin to pineapple upsided down cake. The addition of the coconut was clever ad tasted great! Why didn't I think of that? I only gave it 4 stars because like other reviewers, I found that the top cake really wanted to fall off.It was a like stand-off between me and the top cake If you find a way to solve this problem then it will be 5 stars for sure

Gourmet Mushroom Risotto

Reviewed: Jan. 2, 2011
My first attempt at risotto and it came out wonderfully!! I made this as part of my Christmas dinner and it got rave reviews. There weren’t any leftovers. I followed the recipe to a T, except for the wine because I didn’t have any. I just substituted it with with ½ cup of chicken broth. Also I added only 2 tbsp. of butter instead of 4 BUT the dish still tasted amazing and oh so creamy! I do have one suggestion. Portobello mushrooms are so huge that you only need to use 1 for the amount of rice in this dish. Overall yummy! yummy! yummy!

Chicken Korma II

Reviewed: Jan. 2, 2011
This is a wonderful recipe! It tastes just like what the restaurants serve. Here are my suggestions: First, I suggest that you season the chicken pieces to taste ( it really doesn’t have to be breast ) with some salt, cilantro, cumin, garam masala and ginger and leave in the fridge for about 4-6 hours. This way the flavor goes right through the meat. Second, add 1.5 times the amount of spices(except the bay leaf) the recipe calls for when you are ready to fry in the oil This really gives it a nice spicy taste. Thirdly, people complained that the sauce was watery. I don’t understand why! The trick is to simmer the sauce to your liking. The longer you simmer, the thicker the sauce will become. Fourth, add 1 finely chopped jalapeno pepper (with about 1/4of the seeds) to the sauce to give it that extra kick. Finally serve this rich sauce over saffron jasmine rice

Chocolate Orange Marble Cake

Reviewed: Dec. 29, 2010
I made this for my son's birthday and it came out perfect and moist. I did make a few changes to increase the volume as wanted to cook the cake in a 10-inch Bundt pan. Here are the changes: 3 cups of flour, 2 cups of sugar, 4 eggs and 4 squares of chocolate instead of 2. These adjustments were enough to create a nice big fluffy cake in a 10-inch Bundt pan . Definitely a keeper!!!
