Turkey Brine

Reviewed: Jan. 23, 2006
I meant to review this after Thanksgiving. The brine was spectacular and the turkey came out great. I even accidentally overcooked the turkey (my meat thermometer was apparently broken). It still came out juicy and got raves.

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Mar. 5, 2004
This was a huge hit when I brought it to a neighbor's house. Several people, including the hostess, asked for the recipe. I will definitely make this again and I've been sharing this unique recipe with my friends.

Split Pea and Ham Soup I

Reviewed: Jan. 22, 2004
This was extremely easy to make. I didn't even measure the ingredients. I just "winged it", threw it all together. Mine was ready in less than the two hours stated in the recipe. My husband and I both loved this soup. He actually told me that if we weren't married, and he had just met me and I made this soup for him, he would propose to me! That's some powerful soup!

Melt In Your Mouth Pork Chops

Reviewed: Jan. 8, 2004
What am I doing wrong with this recipe? I've made this twice because I want it to come out right. I absolutely LOVE the taste of the sauce. Used low-sodium terriyaki as suggested. But, my chops have come out dry and tough both times. I'm still giving it 4 stars because the sauce is fantastic. And my family said they like it though, despite the dryness. Must be something I'm doing wrong??

Peanut Butter Vegetable Chicken Soup

Reviewed: Jan. 8, 2004
This soup is SHOCKINGLY GOOD! I was already making a pot of my regular old chicken soup from a leftover carcass. I was looking for a way to make it a little different, less boring. So, while everything was simmering I started scanning the soup recipes and came across this one. I was pretty skeptical, but I couldn't ignore the incredible reviews. So, I took a chance. Everyone is right. The peanut butter does add this incredibly unique taste that is very complimentary to the chicken - it does remind me of Thai food. You don't even need to necessarily follow the recipe exactly. I just found whatever vegetables I had in my fridge, chopped them up and threw them in without measuring. I also thickened it up a bit by making a slurry out of flour and water (I shook it up to blend it), then I added it to the soup. It made it creamier. My husband and even my daughter LOVED it. I was afraid to tell them about the peanut butter, but I did and they were completely surprised. I will DEFINITELY make this again.

Best Brownies

Reviewed: Dec. 22, 2003
I liked them, but didn't love them. They were dense, but I probably should have added chocolate chips or something. And I wasn't crazy about the frosting. I don't know if it was the honey, or not, but I wasn't crazy about the taste of it.

Spinach-Stuffed Flounder with Mushrooms and Feta

Reviewed: Jul. 16, 2002
My husband and I really enjoyed this. It was very easy to make and very light. But it was still satisfying. I used fat-free feta cheese. Next time I might season the fillets a bit before baking. Definitely will make again.

Strawberry Soup I

Reviewed: Jul. 16, 2002
I really liked this. It was very easy to make...only took a few minutes. I made it with non-fat plain yogurt and Equal instead of sugar. It was low-fat and very refreshing for a hot summer night.

Blueberry Pie

Reviewed: Jul. 15, 2002
Fantastic pie. I made two pies....one with blueberries and one with raspberries and both came out great. I took the suggestions for increasing the sugar and cornstarch, and I ditched the cinnamon. I will definitely make again.

My husband and I loved this, but my daughter did not. Very yummy though, and we will probably make this again.

Sugar Cookie Frosting

Reviewed: Oct. 30, 2001
Very good frosting recipe. I didn't think it was quite firm enough for stacking cookies though. I put the cookies in individual cellophane bags tied with ribbon, and the frosting did not smudge. The softness is good for the kids though, very tasty. Tastier than royal icing.

The Best Rolled Sugar Cookies

Reviewed: Oct. 30, 2001
This recipe is fantastic. I added black paste food coloring to make black dough and used a giant bat cookie cutter to make Halloween cookies for my daughters class. I outlined them in purple Sugar Cookie Frosting (great too) and put them in cellophane bags. She gave two a test try tonight and declared them "the bestest, most deliciousest, wonderfulest cookie ever".

Homesteader Cornbread

Good, but not as moist as I had hoped. It was somewhat dry, but maybe that's my oven. I may try to make it again and take it out earlier.

A-Number-1 Banana Cake

Very yummy, very dense and moist banana cake. I have so often found cakes from scratch to be so dry, but this one is absolutely fantastic. I will definitely make this again.

Apricot Chicken I

Reviewed: Oct. 14, 2001
This is the best recipe yet from this website. The reviews are true! My notoriously picky 7 year old daughter actually told me it was so good that she wants me to make it again. She has never done that! I threw it together in just a couple of minutes, very quick to prepare. I didn't have a 4 QT casserold dish, so I used a 13x9 in. glass dish and cut the time down to 45 minutes. It was tender, juicy, and the glaze was yummy. I ABSOLUTELY will make this again.

Cola Chops

My daughter loved this more than I did. I think I might adjust the recipe next time and maybe try some barbecue sauce instead of ketchup, and a little less cola.

Easy Mexican Casserole

Reviewed: Sep. 7, 2001
I used all lowfat ingredients for this (ground turkey, fat free sour cream, etc.) It still came out pretty good and my husband loved it. Although I'm sure the "full fat" version is probably better!

Orange Cream Fruit Salad

Reviewed: Sep. 7, 2001
I liked it, but I don't think I would serve it at a party or anything. It was a little on the heavy side, even though I used lowfat ingredients. I'd probably cut out the bananas and add some different fruit for color and variety. The bananas get a little slimey.
